You don't actually have to eat them soggy. We have a debate whether or not chilaquiles should be crispy or soggy. I personally don't like them to get soggy, so what you do is you plate the tortillas first and then you pour the salsa over them, so they take a little bit longer to get soggy. If you'd like the full experience you should use cotija cheese, it's kinda similar to feta but saltier and drier, then you can have a side of beans (you should mash them first) and you can also add onion on top of the chilaquiles. It's also common to eat them with pork or chicken. You should try to burn the ingredients in a skillet tho, instead of using the blowtorch, we call them "tatemados". And it is definitely a MUST to fry the tortillas before serving, I'm yet to know someone who doesn't
It really depends on personal taste, I love my red chilaquiles soggy but only eat green chilaquiles crispy, unless they come on top of molletes like the Sanborns Tecolotes

I'm Mexican and if you want a simpler lazy version of this that's not at all spicy just cut the tortillas the same way, add a good amount of oil (but not too much) to a pan and depending how hard or soft you want the tortillas leave them in the oil for the desired texture. Then just crack eggs at the top and stir. Add wtv seasoning you want (usually pepper and salt), plate and done! I add sour cream and homemade sauce at the top. It's almost like nachos but breakfast hah. When I'm feeling frisky, I add chorizo before I add the tortillas to the pan, I let it cook then I continue with the same steps. I usually tell my mom to make the more complicated drowned in sauce version: p

You can also cook the salsa separate and put your totopos in the bowl and add the salsa to the totopos and let them naturally soften while you eat - like cereal. If you want to eat them crunchy pour the sauce to the totopos when you're going to eat them (when you have the eggs ready); the sauce will be tastier if you add some fresh garlic to it and you fry it after blend it with some oil (I like to add mexican style tomato sauce just like my grandma taught me). Instead of feta cheese we use cotija cheese, queso fresco or oaxaca cheese and we also add some sour cream and purple onions to the top. Some refried beans on the side and there you go. (You can also add some chicken on the top but I think it depends of how hungry you are)

Try Oaxaca cheese instead of feta! It's that crumbly white cheese. Looks kinda like feta, but will be more of an authentic Mexican cheese.
Interesting how you made the sauce, looks like salsa. Mine is more of an enchilada sauce cooked down with dried chilies and strained. I guess there's more than one way to make it, looks great! This is something we make at my house everytime there's leftover chips!
