      Best advice is get a thermometer. I got one for Christmas and I love it. No more guessing or overcooked meat. It’s great for making caramel and toffee, too.

      Week that's not to bright, if you want the same rarity, a thin steak isn't going to need as long a a thick one

    I made this for my at the time girl friend 12 years ago along side some Brussel sprouts, roasted red potatoes and an arugula salad. She loved it. She's my wife now. And I teach my step daughter how to cook. I love this dish.

    WARNING: Whatever you do, do not cook the steak fridge-cold. Rest it on the cutting board for at least 10-30 minutes before you season it. It cooks better.

      The steak never comes to room temp the only thing that comes to room temp may be the surface. To many people have done video experiments debunking letting your steak come to room temp.

    This was great! Just made it. the only difference is i didn't have Avocado oil, used grapeseed oil to start with. This method, especially the timing, totally fixed my pan seared striploin steak compared to any I've meade before.

    If it's 4 mins per inch per side, is a 1.5 inch steak 6 mins per side? Or just 4 minutes?
    (2 inch steak would be 8 min per side)

    Excellent! I refrigerate the steaks after salting for up to two days to allow the salt to work into the steak.

    Fantastic, I'm a single bloke and never been able to cook steak properly without it being like shoe leather.     The one problem is you shouldn't whisk in the butter at the end. Just let it sit there and melt naturally, and swirl the pan to incorporate. The sauce will have a better viscosity that way

    I always prefer rosemary to thyme in this recipe and i feel like rosemary was more common but lately everyone uses thyme. Both are nice though

    I get the 4 min per inch per side part, but can anyone please tell me what should be the heat/flame level: low, medium or high ? ( i use induction cooking surface). Please help if someone knows. I ve been trying to make a medium rare and always tend to overcook it. Thank you.

    Made this for my wife and I with a 1 1/2 inch strip 5.5 minutes each side and they were perfect. The sauce on top was the finishing touch.

    Shereen I have an electric stove which doesn’t get as hot as a gas stove. Do I leave the steaks on longer?

    looks good but try 3 minutes per. NY gets a little grainy when it's that done (closer to the medium side), a little more rare is better! 😉
    A side note...
    If you're using a grill then flip *every minute* until you've gone your 4 minutes each side, you'll get a better, all over sear and much less gray ring! 😊 (If you have a screaming hot frying pan, go closer to two on the first go so your presentation side is good, then do your flip every minute until you hit the temp you like... Then proceed with your sauce as above). 😊

    I think the better choice is oiling the steak, not the pan. Also just use kitchen tissue to dry the steak. ALSO NON STICKY PAN (in my opinion only)
