Gems are basically programs running on silicon-based supercomputers. The diamond attack more or less corrupted all the program code, like for the shape of the hard-light holograms that they project for bodies, their higher mind functions, etc.
How Steven is that compassionate is one of the best parts of his character, and how even though he wasn't able to heal her that he still reunited her with her crew and that was enough is really sweet.

5:35 that's actually a reference to a character from the official steven universe games, since it's not "relevant to the main story" i'll say she's a hessonite, a type of garnet, and she was centy's commander. (BTW gosh i can't wait for your reaction to the last episodes, the end of the main series is sooooo good and i'm really excited since you're not that far from the "good" stuff! (also if you ever get the chance, I highly recommend you play the games, hessonite is my second favourite garnet, right after Garnet)

I always interpreted the gem corruption as psychological war truama, and they have forgotten who they are because of it and became monsters

The way Steven wanted to apologize to the diamonds even though he knew they were responsible for corruption shows how caring and compassionate he is.
I always felt it wasn't directed at the diamonds but to their victims. Not as an apology, but in sympathy to what happened.
