Roasted chicken is the healthier option to eat than fried chicken. It doesn't require gallons of oil to cook. You can brine this with water and salt mixture or just dry brine just like mine. Brining helps the chicken retain the moisture ang make the meat juicy.

Ingredients:
1 whole Chicken
1 tbsp Salt
1 tbsp Black Pepper (ground)
1 tbsp Dried Rosemary
1 Large Onion
4 cloves Garlic
Sauce:
Soy Sauce
Calamansi or Lemon
Chili Peppers
(you can add more if you want like minced garlic and onion, cilantro, oil, etc)
Store bought lechon sauce
Let the chicken rest for 10 minutes before serving! Don't throw away left over bones because you can use it for soups.
