Mocha Chocolate Cake
**Used piping tip : 869k
** 18 cm(7 inch) round pan
Ingredients ( 1 tsp = 5 ml, 1 Tbsp = 15 ml, 1 cup = 240 ml)
[For mocha chocolate cake]
*Divide the batter into three parts and make three cake sheets.
200 g (1 cup+1 Tbsp) brown sugar( You can replace it with Granulated Sugar. )
200 g (3/4 cup + 2 tbsp) unsalted butter, softened plus extra for the tins
4 eggs
200 g (1 1/2 cup + 2 Tbsp) all purpose flour
56 g (8 Tbsp) unsweetened cocoa powder
1 Tbsp baking powder
1/4 tsp salt
1/2 tsp vanilla extract
2 tsp instant coffee powder
4 Tbsp(60 ml) milk
[For Mocha Buttercream]
350 g(1.5 cup) unsalted butter(softened)
370 g (3 cups) powdered sugar (shifted) (icing sugar or confectioners sugar)
1 Tbsp (7 g) unsweetened cocoa powder
2 Tbsp (12 g) instant coffee powder instant coffee
90 ml hot water
1/4 tsp salt ( *Optional but recommended, If you use salted butter, skip it.)
1 tsp vanilla extract ( *Optional but recommended.)
1~2 Tbsp milk or water (*Add little by little if necessary.)
[Dripping ganache ]
60 g dark chocolate + 60 g whipping cream

I did a lot of mistakes during preparing the ingredients. This is my second attempt using this recipe. The first one I baked, my family members said its super sweet, so I want to reduce only 10grams of the sugar, but unfortunately I reduce it more than half! I didn't realised I only put 90grams amount of brown sugar! Amazingly the taste turn out just nice and I love it.

Do you not add sugar syrup on the cake bases before applying whipping cream?
In my case, I only apply syrup to sponge cakes like genoise.
Butter cakes and vegetable oil based cakes are not applicable.
It doesn't matter if you apply syrup if you want.

Joon, I notice your cake looks really dense and fudgey, even though your fat/flour ratio is 1:1. What part of your method created that? Was it adding the eggs one at a time with the tbsp of flour mixture and mixing?
Add 1 egg and 1Tbsp flour mixture to butter and sugar mixture and beat for 1 minute. If you make enough air each time you add an egg, the texture of the cake feels more soft and fudgy.

But this is American Buttercream, so it's sweet buttercream. The sweetness can be increased or decreased by 10% according to your taste. For the amount of butter, follow the recipe.

I just made the mocha cake and buttercream icing. Family loves the taste of both. I'm novice baker so would have appreciated more details in the recipe or verbal instructions in the video. What did I do wrong? Did not prepare the coffee mixtures ahead of time so they could cool. Did not know that blending by hand, hand mixture and big handsfree mixture might give different consistency to final "mixture". Also if the recipe (text) layout had more details as to what gets mixed first, why you only want to add little dry and wet and mixture before repeating the process. I've now taken your recipe. Replayed your video about 40 times so that the instructions will now result in a better maybe perfect mocha cake with buttercream icing. My Buttercream Icing Is NOT SMOOTH like mayonnaise..it has bubbles in it...
