As soon as you said mole I was in! I'd love to be able to read the walls there too.
Definitely seems like an unlikely combo, but stranger things have happened. They make it look like the kind of food you pay hundreds of dollars for too, but from their site it doesn't look like they actually charge that kind of money.
They don't charge too much more than most ramen shops! Definitely - they made it work...and with such elegance.
Aahh, when you said mole, that made sense. I can see a dipping broth made out of a mole sauce. I could get with that.
They made this work, and so well with that mole base.
It looks interesting. Sad, we won't be in Japan during February to try this tho. If only they make it every day lol
This year from what I recall it was available for a much longer period in Feb. Maybe a future Japan trip in Feb? 😊

I really want to see in your website what would be your top 10 ramen in all of Japan based on your personal preference, every year. And since you eat a lot of ramen, your top 10 ramen list may change from time to time.
I've been working on a Top 20 in Tokyo list...but even this one is hard to make 😅.
As you said too, tastes can change...that list might look different later down the road! Please standby as I work on these lists..
I've been trying to make a top list as well for me and my friends, but it's really hard in Japan. I feel that there are so many choices that are remarkably different, and my preferences change according to my mood and how hungry I am. Right now, I just recommend places to my friends according to their taste preferences. I know what they like here in the States so I can make recommendations based on that. I have some friends I would tell not to even eat the ramen in Japan because some of these ramen shops they prefer here in Atlanta are just so far removed from general Japanese flavor profiles that they might find the real ramen off putting. Just recently went to Okinawa and was blown away with some of the spots there. Definitely some sleeper spots that are easy to miss! Basically, I just came back from a whirlwind tour in Okinawa and Tokyo and ate 59 bowls in 12 or 13 days. Of those 59, I'd say 45 of them were absolutely top-notch and would be hard to rate one above another. I'm now thinking of separating my list by styles of ramen instead of just "ramen" because I feel that's too broad! I think it also depends on what you get at certain shops. For example, I had the Shoyu at Nakiryu and thought it was very good, but probably not Michelin star worthy, but then I had the Tantanmen and my opinion was completely different! Now I want to go back to Mensho San Francisco on a February because that chocolate tsukemen looks insane. I had their special A5 Wagyu ramen before, and that was mind-blowing to me! Honestly, I've tried the majority of places that Frank has reviewed and plan to eventually get to the couple of places i haven't been to yet, due to remote locations or exclusivity, and they've all been pretty great to mind blowing! Frank has really done some amazing research, and I highly recommend his ramen tours if you ever end up over there. Ugh.. I've been having ramen withdrawals, so I'm here watching these videos really early in the morning and making comments, lol. I guess I'll pop open one of those instant ramen I smuggled here from Japan. I bought a $140 suitcase so I could sneak back about 20 bucks worth of instant ramen. 😂

This sound's great actually. A cold soba noodle made with coffee and coconut with a white chocolate white truffle dipping sauce would be great.

This sounds insane, unfortunately I have a peanut allergy!
