As a Chef, few vegetables are better than beets. A roasted beet salad with goat cheese, walnuts, olive oil and balsamic vinegar is one of life‘s great pleasures. Looking forward to growing my own home! Thanks for the tips.

I love roasted beets. But my favorite part of beets? Beet greens! I like the greens sauteed in butter and EVOO with a little garlic. Delish!

My beets didn't do anything in our last cool season here in S. Florida. I did a soil test, through Unibest. I found that my "Mel's Mix" soil was extremely deficient in both potassium and nitrogen. My mistake is that I didn't add as much fresh compost as I normally do. This growing guide confirms what I knew about beets and nitrogen. I'm sure not having potassium might have been a small part of the problem as well. Thanks for the info!
Just rediscovered beets. Did not like them as a kid [who does?] and spent my whole life avoiding them. Tried some the other day and wow, I was missing out. Now I try to include them as often as I can. Been eating beet microgreens, but decided to try to grow all the way. Great video
Hello! I was not successful last year with beets, so I came to the expert to be successful this year. Thank you for this.
2 gardening seasons of trying to grow beets in northern Wisconsin. All I got was leaves and no bulbs. My Master-Gardener friend told me my soil was probably too high in nitrogen and too low in phosphorus. We had the soil tested AND it's too high in phosphorus and low in nitrogen. We applied the recommended amount of nitrogen to the whole garden; hopefully this corrects the problem and Luke is right!!
We love the stems! They have a mild beet taste and consistency of celery!

Grew golden beets they were very good ! Going to try a crop of red for winter.Had grown parsley and only used so much so we turned the rest into the soil. Hopefully this crop will be even better also added some sand to make the soil to make the soil easier for them to expand. I just love beet greens too ! 😊

I just put my beets down a few days ago and they're popping up! I'm in SW PA and my soil is kind of crappy (this is my first garden) but I'm hoping to get a few good ones! I love a beer roasted in the oven! YUMMY!!

Having little twigs and pieces of wood in your compost is great, it helps aerate the soil and retains moisture like perlite. Just avoid bigger pieces of wood or stones, particularly for root crops as they can damage the vegetables as they grow.

Thanks so much for explaining the nitrogen thing. I've heard some saying you need lots of nitrogen while others say not to because it'll produce leaves but not the root. More leaves = more root makes complete sense.

What do you think about covering the beet portion of the bed with plastic until you start to get sprouts to help keep the moisture in but allow the sun in?

As the video pointed out, beets are the easiest thing to grow. I make a smoothie out of them mixed with banana and lemon. I also add one leave but the leave has a strong taste and you may not like it; although the leave contains lots of nutrients.

I'm on my fifth year of trying to grow beets. I have never gotten them over a few inches and no bulb. This year I used Trifecta for the first time and now I have massive leaves but no big root to hold the beet leaves up. Everyone says beets are so easy to grow but I've had it. This will be my last year. I have done everything recommended from every beet teacher out there. 😥

Bunnies love beet seedlings so I had to succession plant twice. Just picked a nice one yesterday as the garden is now bunny proof. Do you plant the seeds differently if you want just the baby greens for salads? Do you have a borscht recipe for us too? Good info - didn't know about the N needs.

Don’t know if you know it today but compost ist acidic - slightly acidic 5.8-6.7 pH but it buffers the ph well :)
That’s the nature of the beet.
Note: Cylindra beets, are supposed to be oblong, rather than round... keep that in mind; they are almost like carrots.
Been using potassium nitrate (Stump Remover) to start almost nearly all my veggies, helps with growing luscious green leaves early, keeps them healthy, makes the rest of the growth cycle easier... then start giving phosphorus once I start seeing the top of beet's head popping through the ground. Many experts consider KNO3 to be a "luxury fertilizer" because it is used instantly by the plant; does not require breakdown like others. For early rooting, I use Rhyzotonic, which is seaweed made... works amazing. Looks like my problem was given them too much sun (12-16 hrs), not enough phosphorus and too tight of soil. Will more likely use sand and some Perlite to loosen things up, maybe some charcoal chunk. They were out in the scorching heat of summer and I think, stunted their growth; last summer was relentless with the heat. Beets made delicious canned preserves though... almost none left. :'(
What I don’t understand is when people talk about dirt levels. And when people test them. People back in the day used to grow crops without testing soils. They figured it out without all these fancy tests now. It’s frustrating when you speak to someone that knows plant crop growing and they ask about the dirt levels.

Thanks! I don't want the beets too high glycemic. I do want the leaves as high nutrient content and great liver detox also make much tastier keto chips than kale. So loose soil and lots of sun awesome.
Thanks for the info about Nitrogen. I use 5-10-10, but I guess I better add more N. I thought they would be like radishes-too much N and the roots won't form.

I appreciate all the details in your how-to's , Luke :) . Hello from western WI btw. . I am wondering if, on the topic of keeping even moisture levels for the beets ( and most other crops ), if mulches are recommended for beets. Since it should work in our climate and am usually on more clay than sand soils ( am moving again ), I plan on doing the mulching with compost ( turns out it counts, as a soil covering ) as Charles Dowding and other no-dig & no-till growers do . Richard Perkins & Singing Frogs Farm being my other main inspirations along w principles of the back-to-eden methodology. In our climate, hay, grass or wood chips being my other mulch choices. If u ever have knowledge of whether or not mulches at all ( besides compost ) or which kinds, are recommended or not, thanks for including it. Have a blessed season !

You can make your own dirt by composting, pretty easy

Quick question: I pot planted beet seeds inside in April because I live in a colder climate. They sprouted really quickly and beautifuly. When they got to about 2-3 inches long, they lost their leaves, wilted and rotted. Any advice?
I know you asked this a year ago, but since you say you planted in a pot, maybe the soil you used didn't drain well? Too much moisture will cause rot.
To add to the soil and possibly light issues root veggies are not the best thing to plant indoors for transplant. Container planting is fine moving it outdoors but root veggies beets carrots rhubarb radishes etc do much better without transplant.

Do you have any tips for beets seedlings that seem to have stopped growing? Planted 17 days ago, they emerged out of the soil on day 8 and haven’t grown any visible growth since. They get full sun and we used a raised bed potting mix

Ha! I didn’t have to wait to see the video because I waited to start gardening. Haha
one seed will produce one beet root? Or one seed can produce 2-3 beet root ? If I sow, 10 beet seed then 10 beet roots are supposed to be produced, right? Also, if the soil has a lot of water, like the soil next to the stream, moisture would be always abundantly in the soil. Would that be OK?
One seed 1 beet. Soaked soil might rot them so be sure to let the soil dry between waterings.
Ok I have my beets grow , cylindrical beets ,so it’s still cold but maybe in beginning May I put them in ground, so I will put tree together .Love experiment.Hope works for me, I just see video harvest that beets.

Can any beet varieties survive winter ground freeze and emerge in the spring okay, like carrots ?
Treat them like your carrots. The sugar in the roots protects them.

I know it's not recommended to transplant beets but do have any tips for attempting to transplant a few? Also do you have a tutorial on growing ancient wheat and also for growing alfalfa?

I wish most/all "expert" gardeners could agree on more things. I just watched another beet video where they say that too much nitrogen results in bigger leaves (as this video also says), but then you get smaller beets (this video says you get bigger beets by adding the nitrogen, not smaller). Thus the other video says too much nitrogen is a problem, whereas this video says you need to add more nitrogen. And then this video says you need full sun and lots of it, whereas others say you need to cut down on sun and give them some shade.
In regards to the sun aspect, what about growing beets in the fall where the sun is less?
I don't see a harvest link below? Also, aren't beet seeds actually clusters of multiple seeds? If so, what are the odds one wouldn't sprout if the seeds aren't old or were stored improperly?

Thanks Luke! One question though, I presume you thin your seedlings when they come up? Do you have a 'best' method to thin? I've found with most, if not all beet seeds (same with spinach, Swiss chard and silverbeet as other examples), 1/2/3/4 sometimes 5 plants will come up in the one spot (obviously multiple seeds in 1 'pod') I absolutely hate thinning seedlings as I don't want to kill any of them, and have tried leaving them as is, but that doesn't seem to work either! Is there any way you can get around it so you don't have to thin, or do u just have to do it? I must admit I was a little surprised that you plant 2 seeds at 3 in. considering I've found I end up with multiple seedlings up, but obviously your 2 seeds to 3 in. Is best, as your results are quite clear!
I would love to see your recipe for pickled beets if you do that with this harvest (or any other beet preserving methods-I did see the imitation grape jelly one!)
