    Love the authenticity of your video - I find the hardest thing is to keep the temperature of the oven where I want it which necessitates a ready supply of coal ready to add when necessary which means I need a second fire burning - which is a pain……

      Thanks Graham. Yes a pain in the rse having additional coals on the go. But the result was worth it.
      Gotta say, I haven’t done another whole brisket that way since, really need to have the motivation, time and event.
