I just bought a wedge of Mimolette a few days ago when I visited The Cheese Shop in Carmel-by-the-Sea (California). I'd never had it before and it's absolutely delicious...and not ridiculously expensive.

I love this cheese, but as a consumer, I seem to be unable to get all the cheese from any of the various cuts. I leave too much that is close to the rind.
Well then show us how it is done. This is a difficult cheese to deal with at a cut to order shop. No cheesemonger would want to cut this cheese when it is cold. Best for a grab and go set-up.

It's quite cheap in france; a couple of bucks for 200 gr. But it's worth to pay whatever they ask for it.
I pay 5 US dollars for 100 grams. I'm assuming you pay around the same for 200?
