Dear Moazzam, Kalari is prepared from raw milk & its shelf life is quite long & further increase during winter. As given to understand, the surplus milk available at homes in hill areas because of difficult to brought for sale to urban areas, practice originated to convert raw milk to Kalari, to store & sold later in urban areas. It is tasty, better than chese, available in Jammu city & in all urban areas of districts of the region, also an item as food stall in marriage parties like fruit stall, potato ticky stall, Dahi, Vada stall with varieties of chutneys. Earlier I used to purchase one or two kg Kalari for my domestic consumption, whenever I visited Jammu, but nowadays the habit is replaced. Patisa made with Desi Ghee of Kud town is famous, quite tasty & available in Jammu & adjoining cities, though two hundred kms away Amritsar city have separate & unique tastes of varieties of sweats prepared with Desi Ghee, as public is very fond of Desi Ghee. Kashmiri Walnut, badam, Kesar is available & Kesar costs Indian Rs two hundred for one gram, quite expensive, but ofcourse used by royal families of Rajasthan while preparing non veg items. Rana Hamir Singh of Umarkot may be in the habit of using Kesar like his relatives in Rajasthan. Walnut wood is very costly, earlier used for sports items like cricket bat & hockey. Nowadays walnut wood furniture have become popular in & outside India after govt enquargements, assistance provided in advertising, promotion, resulting in adding to the richness of already rich Kashmiris because of tourism, apple orchard, handicrafts, shawls business ofcourse getting more foreign exchange. Walnut wood furniture is quite light like plastic furniture but strength & durability is very high with beutiful carvings, designs. Ofcourse Sangwan wood furniture of Saharanpur UP about a hundred kms from Chandigarh is too in demand in India & abroad & all carpenters of yesteryears are now manufactures, managing factories & show rooms. I had been to the muslim majority populated city of UP culture & one may find architect resemblance with Lahore & I relished Desi Ghee Jalabi on a famous halwai shop & returned after spending one full day there. I don't know the reasons behind non use of onions, garlic at many public religious kitchens blessing devotees with free meals like at Banglore, Chennai & at almost all temple kitchens in South India, though easily available on vegetable shops. These temple kitchens also feed the patients of Govt hospitals as per advice, prescription & normal food is provided to prisoners in govt jails. That nutri kulcha thing is soya like the one you used in making soya biryani (though soya quality and taste can differ). Nutri is also an Amritsari item (though available in few other places) but authentic one you will find in Amritsar only.

This is the land of Vaishnavi in whose honour the Vaishnavdevi temple is built .Because of this reason orthodoxy is maintained and this precludes the use of onion and garlic.
