  • Blind taste an old white wine with Master of Wine Dr Pat Farrell. He discusses the proper temperatures for serving white wines and defines anaerobic oxidation with Min, a fan, (now friend) and pharmacist. Although Bernadette served the 1996 Pessac-Leognan too cold confusing Pat a bit, he ultimately deduces the variety correctly.

    I love the whites from Bordeaux, greatly underestimated and overlooked compared to the Bordeaux's reds!

    If you drank wine with spiders in it, you could see you transformed into Spider-Man in the next video. Then Iron Man, Hulk, and Captain America would all come to your house.

      ​@@minjang5695 Min님이시군요! 한국 오신다하셨는데 잘 도착하셨으면 하네요~ 원래 훨씬 길게 찍으셨는데 많이 잘려서 개인적으로 아쉽습니다ㅠ 잘린 부분에 정말로 좋은 질문들 많이 해주셨는데 제 보스가 요부분만 원하셔서 아쉽게 다 내보내지 못했네요ㅠㅠ 나중에 헌팅턴비치에서 한번 뵐날이 오면 좋겠네요 ^^

    What a nice surprise, i was watching the video expecting to discover a new white old bordeaux to search for, and i'm lucky to know that one of my recent purchases was that wine, château la louviere but vintage 1975, and is good to know that my bottle is tres haute epaule(very high shoulder) and it looks as a good sign of conservation, we will know soon. I purchased it along with one bottle of bahans haut brion 1998(which i'm excited to try), and a château la tour blanche 2010 sauternes. Nice video and wine, and great explanations as always, waiting for more, and i hope to see the three musketeers together some day. Have a nice day. P. S. - Writing from mallorca, probably you heard about this beautiful island of the mediterranean, but i don't know if you ever tried some wines from here, that i recommend you to do it if you have the occasion, because these last years we are getting really good wines that i think you will enjoy.

    What a hilarious video Pat! That spider knows what is good. A gourmet, just like you. Attention to a ripened white wine. Finally! Although they are only 5 to 10 years old. Every good taster, like you, knows that fine wine with the years becoming more balanced. I see too often too young quality wines on other channels. While they are at the beginning of their development. Red, but also white. It's a pity you didn't have a suitable cheese or meal with the wine. It becomes even more interesting. Continue to distinguish you Pat. Btw I hope there are spiders in your garden & cellar, a good sign!

    I am coffee traveler and brand marketer for coffee. We are talking about anaerobic coffee. You can see any place, any coffee shop has anaerobic coffee. Recommendation to you for kind of coffee to chose Colombia coffee because they knew how to make coffee like wine. Do not chose any bourbon barrel coffee or rum barrel anyway.

      Try Trader Joe’s for inexpensive White Bordeaux wines. They sell two or three, such as Les Portes de Bordeaux for around $6. It’s a Poor Man’s introduction to white Bordeaux.

It would thus still be interesting to get an anonymous background info to put that into perspective. We now know he's a pharmacist, based on the questions he is likely not a fresh MW mentee yet, so is he just some random guest of yours who drinks beer otherwise or has he booked the personal MW off scratch coaching ;-)?

    Very informative as always! I would have liked to hear more about how this oxtraordinary wine tastes. As far as I understood it only has nice acidity.

    Some of the strangest wines I’ve had were aged whites. How does one discern oxidation from heat damage? I’ve noticed a lot of “deals” on wines ~5-10 years old have this oxidized flavor, or even a kind of rapid aging. My suspicion is they have been laying around at room temperature for longer than they should have. -Chris

    Very interesting. Given your amazing blind tasting skills, I'm really puzzled this could trick you into guessing Chenin Blanc or Chardonnay even. I've never tried aged white Bordeaux yet (discounting Sauternes), but it's hard to believe the Sauvignon acidity transforms to that extent.

      Sauvignon acidity and chenin acidity are similar. Old wines lose varietal character and ten to converge, taste-wise. With age, acids esterify, thus decreasing.

      Whether its wine or food I can correctly pick up any aromas every time. Im particularly good with foods I can be 20 feet away from someone cooking and know what it is and pick up every spice and ingredient in the food. And im never wrong. My family hates it because i know if they are lying about food.
