Wouldn’t the Prosperous Thief only create 1 Treasure token, regardless of how many creatures dealt damage? That’s why it says “one or more” rather “for each”.

Of course, if one of those Ninja then has Doublestrike, that would still make it two instances of damage-dealing, resulting in 2 Treasures.
