I started in the classical orchestra background (I'm a cellist) before adding the guitar and the general apathy to rejection of theory is honestly mind-blowing. Stuff like keys and time signatures are like, day 1 stuff for a beginner string student because it's how you communicate music with other people. You don't necessarily even need the more advanced stuff to play with others (it's good to learn though), but the basic theory will make learning and communicating so much easier.
I find it’s normally in the way it’s presented that causes rejection. It tends to be taught in a sort of universal math-like manner that creates separation between the student, the teacher and the learning material. My personal preference is to target students interests and demonstrate the benefit of music theory as a language using musical vocabulary they’re already somewhat familiar with, a common practice in language learning but surprisingly uncommon in music

At least in my experience it's a bit like Pandora's box, open it just a little and suddenly you see how it impacts so many things (I might've butchered the analogy lol).
Music is a wonderful thing and if you’re enjoying yourself that’s all that matters in the end. Theory is mostly a communication tool for working with others and being clear about what’s happening or what you want. Not to understate it’s usefulness however because it is a powerful tool for your own writing as learning

It’s still a guitar, just with two more strings. The only thing that would really be troublesome to learn on a 7 or 8 string is strumming open chords.
