This Christmas, have a recipe for sweet potato coins!! It’s been a favorite in my family for a while. First, take some sweet potatoes and dice them into thin slices. Lightly spritz them with vegetable oil, and add some salt!! Then, bake or fry them for a delicious treat with dinner :)

Once, when I was about 5, my mom decided to give Santa baby carrots and water. I wasn’t vegan by that time, and I’m still not, I was just like, “Mom, you can’t feed him veggies, it’ll kill him!” She replied with, “honey, we have to keep him healthy and alive so that he can continue to deliver gifts.” I just looked at her, then sighed my iconic dramatic, beautiful, and cringe worthy sigh, and I just said, “okay, you might be right, but if he dies, it’s the vegetable’s fault.” Then, I woke up at 3am to an plate with no carrots on it and a glass of water already in the sink.
