Bruges is beautiful, but tiny! You don't need more than one day to see it all. So you can totally go visit the nearby cities Ghent, Louvain, Antwerp and even Brussels and the sea (Knokke, Oostende, De Haan) aren't that far. I mean it's Belgium. You need two hours to cross the entire country. 😂 The train is super convenient to get around and very affordable too.
Okay then be prepared for bad roads but at least there's lights on the high way so you can avoid them. 😉 I know you're vegan, but Joe should try the signature mussles and fries, waffles and pralines, Neuhaus and Galert are the best chocolatiers. And you be careful when you want to enjoy fries, because they're often made with beef fat. You can enjoy a vegan version of Waterzooi in Ghent, it's the national soup made with veggies and often either fish or chicken, but I'm sure there're vegan options too 😊
It depends I love to go to Brugges and everytime I stay a weekend and there is a lot to see, museums are great, buildings architecture, walk along the canals, etc...of course if you are going only for shopping that might not have much to "see", neverthless Brugges is one of the most beautiful cities in Europe and I am not Belgian ;-)
@NiomiSmart: In Louvain there's some great vegan options! You've got two loving huts there, as well as 'Life Bar' (a completely plant based breakfast/lunch bar which I just know you'll love), 'VegaVerso' (which is a super cute vegan place run by a mother and her daughter, they have about a thousand meals to choose from haha but are only open on Tuesday-Friday between 12-2pm), and T&KO (a very cosy plant based tea room, also run by a mother and her daughter). Louvain definitely isn't big but in my opinion, it's one of the most beautiful cities of Belgium! Lots of history and lots of nice vegan places to eat, the people are quite friendly as well :)

Bruges is absolutely lovely; highly recommend The Olive Tree for dinner, one of the nicest meals we've ever had. And Cafe Rose Red is such a nice place for a drink - lovely and cosy and candlelit!

Brugge is great! The beguinage or 'begijnhof' and the parc 'Minnewater' is beautiful. We also went to see this harpist for free one night, it was the number 1 recommended activity on tripadvisor and it was really nice! You can also go on guided bike tours through the city. If you like beer, there are a lot of shops with unknown types of beer that are really good, you should try some! I would recommend the Moodshopping, they have a beer wall and in the café you can order some small typical Belgian beers to try. Have fun! :)
Bruges (especially the historic center) is stunning, the little streets are very charming and the Christmas Market is really pretty. I'd recommand Minnewater Lake too. You absolutely need to climb the staires of the Haut de Beffroi, the view's amazing.

I would avise Ghent over Bruges. Brugge is really famous but Ghent is more "preserved" I think. And Belgium is not that big, look a little bit into the train but you can even try to do both in one weekend !

Bruges/Brugge was definitely lovely - I visited it last July. I loved how compact and quiet it was, and charming like a fairy tale. Try to get a boat ride, take pictures of the swans, go into the city square and into the Belfort, and peek inside La Belgique Gourmande chocolate shop :)

There are not a lot of things that you can exactly do while you are there, most of all the town is all about enjoying the atmosphere. I recommend trying out the Belgian waffles because they are the best. Also climb the Belfort tower because the view from up above is insanly beautiful. Because you are going to be ready in about a day, I will recommend you visiting cities like Antwerpen, Brussel, but also Oostende which is right next to Bruges. If you have enough time I will also suggest visiting Germany because there are incredible Christmas markets in the center of every city around this time of year. Have a nice time in Belgium! Bruges is a lovely place. Small enough to see in a day. With lots of little streets, great food and if you love chocolate, make sure to check out the Chocolate Museum 🍫. I would also recommend going to Antwerp, great place for shopping, old churches and site seeing. Happy travels.
