- This cake is created for summer, for the season of the most delicious apricots, after an active day, in the evening with a cup of aromatic tea. The dough is prepared very quickly and simply, you don’t even need a mixer, if you follow the recipe anyone can do it) Insanely delicious warm, right out of the oven: airy biscuit, soft apricots fragrant with sourness and sugar crust with cinnamon. Apricots can be replaced with plums, nectarines or peaches.
Ingredients:
For the biscuit:
● butter - 85 g (room temperature)
● sugar - 200 g
● eggs - 2 pcs (large, room temperature)
● almond extract - 1/2 tsp (can be replaced with alcohol with almond flavor)
● vanilla extract - 1 tsp (vanilla paste)
● sour cream - 160 g
● flour - 220 g (sifted)
● baking powder - 13 g (2 tsp)
● salt - 1/8 tsp
● ground almonds - 35 g
● apricots - 7 pcs (approximately 400 g)
For filling:
● sugar - 100 g
● butter - 60 g (melted not hot)
● ground cinnamon - 2 tsp
● eggs - 2 pcs.
Cooking:
1. Soften soft butter with a whisk.
2. Add sugar, beat the mass until light and airy.
3. Add eggs at room temperature, beat until smooth.
4. Add almond extract, vanilla extract and sour cream, mix with a whisk until smooth. Set aside.
5. In another bowl, mix: flour, baking powder and salt.
6. Mix both masses.
7. Line a baking dish with a diameter of 24 cm with baking paper. Pour in the dough. Sprinkle with ground almonds.
8. Cut the apricots in half, remove the pits and put in a mold on top of a layer of ground almonds.
9. For pouring: mix sugar, melted non-hot butter, ground cinnamon and eggs together with a whisk. Pour the mixture over the apricots.
10. Bake in an oven preheated to 180C degrees at an average level in the top-bottom mode for about 60 - 90 minutes until cooked, or at 170C degrees in convection mode for about 1 hour. The pie should be ruddy, with a crust, and if you pierce it with a wooden stick, there should be no raw dough left on it.
11. Cool the finished cake a little in the form, then pull it out, cut into pieces and enjoy)
