Dwaejigogi modumjjim (Pork steamed with vegetables)
[Ingredients]
Dwaejigogi modumjjim
260g pork hind leg slices
1&1/3 cup (120g) green bean sprouts
1/4 (60g) onion
2 (30g) shiitake mushrooms
1/7 (40g) sweet potato
1/4 (50g) carrot
3 (120g) bok choy
1/2 tbsp (2g) scallions
Sauce
4 tbsp (40g) thick soy sauce
2&1/2 tbsp (20g) Hwanman vinegar
1 tbsp (12g) brown sugar
1&1/2 (14g) Cheongyang pepper
2/5 tbsp (8g) ground garlic
1/4 tbsp (2g) coarse red pepper powder
[Directions]
Dwaejigogi modumjjim
1. Chop up the bok choy vertically in quarters, or chop off the end and use just the leaves. Wash it in water.
Wash the green bean sprouts under running water.
2. Slice the onion and shiitake mushrooms about 0.4cm thick. Julienne the sweet potato and carrot finely.
3. Mix green bean sprouts, onions, shiitake, sweet potatoes, bok choy, and carrots in a big bowl.
4. Lay three layers of vegetables and pork slices in the steamer, vegetables first.
5. Boil water in a pot, just enough for the steamer to stay above the surface of the water.
6. Place the steamer with the layered pork and vegetables in the boiling water, and steam for about seven minutes.
7. After about seven minutes, take out the steamer, sprinkle some scallions over it, and serve with the sauce.
Sauce
1. Mix thick soy sauce, Hwanman vinegar, brown sugar, chopped Cheongyang pepper, ground garlic, and coarse red pepper powder in a bowl.
