If you will be putting in a bunch of solar then get a 12 volt fridge. It’s worth the extra money as you don’t need such a big inverter and the conversion losses are much less. RecPro makes a decent unit that will fit the Norcold opening size.
They do make casset style mini split units where instead of one big wall unit you have a few small central style hvac vents that dont need ducting just a pair of coolent lines and a drain line i wonder if you could try to run the coolent lines through the old hvac ducts in the ceiling and just put the casset in where the ducted vents were were

I don’t know if you find that useful at all, but it would definitely take care of any mold or mildew. You have lurking in there.

Great Video. You have made tremendous progress. I was just thinking, you might consider ductless A/C which is also wall mounted. I really don't know the specifics about it, but it may cut down on your ducting project. :)
It's not abandoned if you bought it off somebody and your going to spray those walls more than once right because when you spray paint if you're using an actual sprayer the paint has to be thin before it will go through that sprayer so you're not really getting a good coat on the first time it was me I would sprayed a few times but it's your camper so you do it the way you want to this is just a suggestion
