I think some of the issue is that most substitutes are not 1:1 so they’d need some adjusting in a baking recipe. I’m not much of a baker and would rather just go with vegan butter if following a non-vegan recipe. I’ve had great results with Country Crock Plant Butter (avocado oil) sticks as a sub.
decide which substitute u need based on the fat & water ratio. typical dairy butter is around 80% fat & 15% water, compared to coconut oil for example, which is 100% fat. that water content could be essential to the foundation of that recipe. that's why in baking, plant based butter alternatives are not one size fits all.
I always use crisco for pie crust, I use the butter flavored one cause I’ve always used that and based on the ingredients it should be vegan, but I could be wrong. If something calls for butter I’ve honestly tried using country crock or crisco and I find it works well. I’m kinda cheap though so if you prefer a vegan butter then go on ahead. (I have been back and forth between vegan and not so please correct me if anything is not vegan friendly)
For a next test: best oil-free thing to put on veggies, etc to roast (to get crispy exteriors, to hold spices/seasonings, etc - all the things that olive, etc oil does). TIA.
I have a love-hate relationship with Earth Balance. Love it cold, hate its taste once it's melted. It has ruined a few recipes for me, especially buttery stuff like croissants. I'd rather use vegan Becel if it's going to melt.
Have you noticed a difference between Earth Balance sticks and the tub spread? I like the spread but I’ve bought the sticks because I keep reading to use that for baking for stability? I haven’t tried it yet. I like the Costco tub of Crystal margarine also for a lot of things because it’s consistant and cheap :) I use the shortening too and that works well, even before going vegan I used shortening and butter. Now, pumpkin anything is gross to me! Can’t wait for the pumpkin fall videos to stop lol I also use coconut oil, both refined and unrefined but depends on if I want that coconut flavour to come through. Funny you say 50/50 butter and shortening…that’s what I do with my pie crusts! Get the buttery flavour but the flakiness from the Crisco shortening.

Shortening has effectively disappeared in Europe as some countries banned trans fats. Replaced with baking blocks, which are usually made up of a combination of palm oil, rapeseed oil and/or sunflower oil.

I use Crystal margarine. I just like the flavour of it the most, and it's pretty cheap.

People don’t want more expensive, we want less expensive. Cookies often take a whole pound of butter, that’s too much money.
Try adding artificial butter flavor to some of these
