Sorry, but those ribs aren't anywhere near done. Bet they were tough as hell. BTW: to remove the membrane don't start with a sharp knife. Use a butter knife to get under the membrane, then grab it with a paper towel, and pull. With practice, you'll get it down pat. Oh, and YES, you do want to remove it. Liked your way of stacking the ribs on the Cobb. Could have used a couple more hours though.

They were done. I am working on a hybrid method that start the ribs out in an Instant Pot and finishes 'em up on the Cobb.
