Billy i suggested you put the copper coffee in original spot. Just build a round island but still attached to the countertop. Use some of the wood from the upstairs wall. So all can see around this beautiful copper coffee maker. Cheers
Watching you up on the lift really makes me appreciate all that the original builders had to do by hand without the benefit of additional machinery we have today. They'd have had to be on ladders or hand made scaffolding, up and down and up and down with materials balanced on shoulders or carried up in some way... It's almost mind-boggling to think of!

Just a word of advice for insulating the pipes, put the opening of the pipe insulation facing the inside of the room towards the drywall and tape the opening closed. If you just snap it over the pipe with the opening facing the outside wall it may still leave a gap where cold air can still reach the pipe and potentially freeze the water.

Billy, great work as always. You might want to put metal nail stop plates where the pex runs through the studs so you don't accidentally screw into it later. It will a get done in time and be amazing.

You probably didn't need to add the foam insulation on your plumbing as it's encased in an insulation (Rockwool). It won't sweat in there. You only want the foam where the bare plumbing is exposed to the environment.
Maybe you should’ve bought the plasterboard today because tomorrow they could be out or it could be raining! Go get Yannis and Simon for an emergency Brico run! A bird in the hand is worth two in the bush. Never put off until tomorrow what you can do today, especially since there are factors outside your control!

There is a tool that makes it easy for one man to lift a sheet of wallboard called a panel carrier. It works a treat.
