I am amazed at how good these eggs taste. Seriously. I would eat these in the front-country.

Totally! They are the best dried eggs I have every tried. Be sure to use lots of butter!

I just bring eggs. I live without refrigeration and can confidently tell you that they will keep for up to two weeks. In Europe it's normal to keep your eggs unrefrigerated though to be fair we Americans process our eggs and remove some protective thing and makes them less shelf stable. I forget exactly what it is but that's apparently why we refrigerate our eggs in the first place. Also butter, just normal butter will last a while outside of the fridge I've had stick on my counter for two weeks with no problems

You are halfway correct, but here are some more details.
TL;DR - refrigeration is required because salmonella vaccine is not required in America. The missing protective coating only extends options for preservation and probably also increases shelf life without preservation.
Most countries require salmonella vaccines for chickens. That is why we have to refrigerate in America, not because of the protective coating.
Store-bought eggs basically everywhere tend to be washed, so they lose their protective coating elsewhere the same as they do in America. This means they can't be preserved in a sodium silicate and water solution as was done in times before refrigeration (they can last for many months preserved this way).
If you want to do this you can get unwashed eggs directly from a farm. Commercial Chicken farms are absolutely massive and are a breeding ground for salmonella, so even unvaccinated chickens will be significantly less risky when purchased from a local farm. Still, there will always be a level of risk unless they are vaccinated.

Thanks for the review. According to what I've skimmed over it's $13 for a dozen eggs. If that's the case you might as well just go with freeze-dried. Far less hassle because all you need to do is add hot water.

The ova easy are WAY expensive, it is true. I just haven’t found a better egg if you want it to taste like real eggs. The freeze dried are less hassle, but they don’t taste anywhere near as good. The regular powdered egg is okay, but these eggs taste like I brought whole eggs.

I am looking for a freeze dried or dehydrated egg meal that all I have to do is add hot water stir and wait. There are a few out there by the usual brands for hiker meals but they all include things like meat or peppers or other such stuff. No one seems to make just eggs (cheese added would be ok but nothing else).

Thanks June! You will see that my older videos are more bland. I realized that is not really who I am, so I thought I would be my weird self. :). Welcome to the channel!

What pan is that you used. I"m looking for a small backpacking pan. Thanks

The pan is a fry bake pan. They don’t have Teflon but you can use metal utensils. You can get the fry bake pan at frybake.com. I got the alpine fry-bake set. It is extremely versatile.

Could I bring pickled eggs backpacking? I heard you can even bring uncooked eggs still in their shell.

    • @backcountrycuisine6226

I've never tried bringing pickled eggs. I can't imagine why they wouldn't work, but not very good for scrambled eggs :)

Why is the camera 5 miles away from the pan. You’re silly

    • @backcountrycuisine6226

That’s fair! I try to make the videos without moving the camera too much. Often it takes me some time to prop it up on the pack/rock so it takes in the whole scene. But I should bring it in closer more often, so people can see better! Thanks for the feedback!

Good product but the price is not right. Too pricey per egg.

Chin Seng I totally agree. I still use the “cheaper” egg when I am baking. But if I want the best tasting eggs, I go with ovaeasy. Not the cheapest though!
