To answer why there's so many small countries in Europe, the only two words that can be used are "Vikings" and "Rome". Rome was a massive empire that ruled pretty much all of Europe, but when they collapsed, a lot of the local populations, especially the ones that had been under Rome's heel for a good thousand years or so decided to form up their own borders, and when Vikings came a calling, they added onto that, invading into countries outside of the ones you usually consider Vikings to be in. As a result, the map of Europe got changed A LOT throughout history. Compare that to the United States, who - after we became independent - bought our way to owning most of the land we have (or invading into parts of Mexico) in order to make us as big of a country as we are
Also has to do with the fall of the Soviet Union. A lot of the Eastern European countries came out of the Soviet Union's fall, such as Ukraine and all those countries in the Balkans that used to be Yugoslavia.

Falkland Islands aren't a country, Greenland isn't a country, Western Sahara isn't a country, etc. Didn't need to use non-countries when there were so many spare countries.
