  • Tenshindon(天津丼) or Tenshinhan(天津飯) is a really quick and easy everyday dish which combines crab omelet on rice with no crazy egg flipping required. It tastes best with fresh crabmeat, but you can use kanikama(imitation crabmeat) economically. Tenshin Donburi's real differentiator is the gently thickened, creamy but clear, sweet & savory umami enhanced gravy. The omelette is similar to egg foo young, kanitama, or other popular Chinese egg dishes. Tenshindon is a simple Japanese dish with Chinese influence which combines crab meat omelet and rice recipe!
    我很爱吃蛋包饭,嫩滑完美的蛋皮巧妙的包裹着米饭,简单又美观。可是这道看起来简单的中华料理在家里怎么学都做不像样,缺乏外观,虽然味道极好,但是吃货如我并不满意。于是在网上搜查一番,发现一款蟹柳蛋盖饭,它叫「天津丼」或「蟹玉丼」是一道很著名的日式中国菜,但是在天津本地是没有这道菜,与其类似的菜式只有“锅𤌙里脊”。天津饭是指把滑蛋蟹肉盖在米饭上,然后再在上面浇上浓浓的芡汁。这样一来,就算蛋皮做的不完美,也可以用芡汁遮盖。不信的话,一起来做做看。
    Tenshindon Ingredients:
    [Serving 1 person]
    Rice 1 bowl
    Eggs 2
    Imitation Crabmeat 6-8 Chunks
    Pepper As you desire
    Salt As you desire
    Green Onion 2
    Nori Komi Furikake Seasoning 1 tbsp
    天津饭材料:
    [1人份]
    米饭 1碗
    鸡蛋 2颗
    仿蟹肉棒 适量
    胡椒粉 适量
    盐 适量
    葱 适量
    海苔调味料 1 tbsp
    Gravy/Soup Ingredients:
    Water 100ml
    Dashi 1 tbsp
    Sesame Oil 1/2 tsp
    Pepper 1/2 tsp
    Starch Water (1tsp corn starch + 3tsp water)
    汤汁材料:
    水 100ml
    Dashi浓缩高汤 1汤匙
    芝麻油 1/2小匙
    胡椒粉 1/2小匙
    淀粉水 1小匙淀粉+3小匙水
    Instruction:
    1. Rinse, Wash & Cook rice (wash rice first, add water to the match water level "1cup rice=1cup water", place the rice pot into rice cooker then press START button).
    2. Crack eggs & mix well.
    3. Julienne the imitation crabmeat into fine strips or ribbons.
    4. Transfer the chopped crabmeat into egg mixture, mix well.
    5. Chopped some green onions, set aside for later.
    6. Take a bowl to mix all ingredients(water+dashi+sesame oil+pepper) together for the sauce.
    7. Scoop a bowl of cooked rice(leftover rice), transfer into a bigger bowl, add some sesame oil & some Nori Komi Furikake seasoning for flavor & mix well.
    8. Scoop the seasoned rice back to the rice bowl, place the rice bowl upside down on a plate.
    9. Preheat the pan in medium-HI heat, melt 1 tablespoon of butter & coat the pan evenly.
    10. Pour the egg mixture, gently spread the imitation crabmeat by pushing outwards.
    11. Slide the omelet to cover the rice dome like a fluffy blanket, use a spatula to tuck the omelet on the rice dome to keep the shape round.
    12. Pour the dashi broth mixture into the hot pan, gently simmer and add the cornstarch solution to thicken the sauce into a gravy. Add green onion(optional).
    13. Pour the dashi gravy over the imitation crab omelet rice, & enjoy!

    1. 煮饭(先将大米淘洗干净,加水至“1杯米=1杯水”的配合水位,将饭锅放入电饭锅中,然后按开始键)。
    2. 鸡蛋打散,搅拌均匀。
    3. 将仿蟹肉切丝。
    4. 将切碎的蟹肉倒入蛋液中,搅拌均匀。
    5. 切一些葱花,待用。
    6. 取一个碗,把所有酱料(水+浓缩高汤+麻油+胡椒粉)放在一起搅拌均匀。
    7. 舀一碗米饭,倒进一个大碗里,加入一些麻油和一些海苔调味料,搅拌均匀。
    8. 把调味好的米饭舀回饭碗,将饭碗倒扣在盘子上。
    9. 中火预热平底锅,把黄油均匀融化在平底锅里。
    10. 倒入蛋液,里里外外地轻轻推,将仿蟹肉摊开。
    11. 将煎好的蛋皮像盖毯子一样盖住饭团,用抹刀将突出的蛋皮塞在饭团上以保持形状圆润。
    12. 将浓缩高汤混合液倒入锅中煮至起泡,加入淀粉水,使酱汁变稠。加入葱花。
    13. 最后,将浓稠的酱汁倒在滑蛋盖饭上,享用吧!

But tenshinhan real differentiator is the slightly thickened, creamy but translucent, sweet-and-savory umami enhanced gravy.
