  • My family and I recently acquired some new property, and we discovered that there was Sassafras all over the place! Of course, this meant I had to try my hand at some foraging and making my one root beer from scratch! This batch didn't turn out perfect, and I'm excited to have a continual source of Sassafrass to allow me to try again!

Nice video surprise for today! Cool project. And sweet plot of land!
But eyeballing fermentation in a glass bottle --- eventually this might go wrong. I'd recommend checking the maximum pressure for the type of bottle you use and calculate the desired amount of sugar that stays within in the limits. Ofc if flavour is coupled to the sugar content, its difficult, but ye...not losing an eye is cool as well :). If you just know by heart whats okay for your setup (since you also make kombucha etc.), thats one thing, but the potential for disaster should still be pointed out for others :).

Totally fair point! It was late and I was getting lazy. This is a good reminder to slow down and plan ahead!

Been some time since this video post, try adding wintergreen to a batch. A lot goes a long way, in my experience ALL root beer needs wintergreen. Great video!!!!

Yes I agree the cinnamon flavor is to strong. I am going to cut mine from 5 to 2 grams or maybe 2.5 grams. Its still very good the way it is but it can be improved. There should also be alittle bite in a root beer but this one is smooth still nice tho.

Great job, family! I laughed right out loud when Margo screamed at the "pop".

I didn’t know sassafras was so easy to find in Michigan, but after you showed the leaves I realized I see those all the time. I also love root beer, so looks like I’m going to have to make my own.

I don't recall ever seeing sassafras growing in northern Minnesota and not sure if it will survive the winters or not but I ordered a few saplings online and giving it a go but I don't want to just rip up the entire tree at some point and not have any left and have to buy more trees and have to wait for them to grow again.
How could I go about practicing sustainable harvesting with my sassafras?

I'm not really sure, I just have so much of it I haven't had to think about that. You could harvest the fruit and replant I suppose. Check this out: homeguides.sfgate.com/propagate-sassafras-65183.html

Just a thought, is there a reason not to peel the roots before drying? I know peeling would be way easier.

Looks good, but that's a LOT of work for very little product. Think I,ll stick with store bought.
