I just watched your Q&A video, I didn’t realize you were in Fukuoka. I’ve been there before! I was in the US Navy, stationed in Sasebo and we used to go to Fukuoka for the night life. Those are pretty old memories though! 😅😅😅
and samosa Ingredients: For the Dough: 2 cups all-purpose flour (maida) 1 teaspoon carom seeds (ajwain) 1/4 teaspoon salt 4 tablespoons oil Water (as needed) For the Filling: 4 medium potatoes, boiled and mashed 1/2 cup green peas (boiled or frozen) 1 tablespoon oil 1 teaspoon cumin seeds 1 teaspoon fennel seeds (optional) 1 teaspoon ginger, finely chopped 1 green chili, chopped 1/4 teaspoon asafoetida (hing) 1 teaspoon coriander powder 1/2 teaspoon garam masala 1/2 teaspoon amchur (dried mango powder) 1/4 teaspoon red chili powder Salt to taste Fresh coriander leaves, chopped Instructions: For the Dough: Mix Dry Ingredients: In a large bowl, mix the flour, carom seeds, and salt. Add Oil: Add the oil and mix well until the mixture resembles breadcrumbs. Knead Dough: Gradually add water and knead into a firm dough. Cover with a damp cloth and let it rest for 30 minutes. For the Filling: Heat Oil: In a pan, heat the oil and add cumin seeds. Let them splutter. Add Aromatics: Add fennel seeds (if using), ginger, green chili, and asafoetida. Sauté for a minute. Add Potatoes and Peas: Add the mashed potatoes and green peas. Mix well. Spice It Up: Add coriander powder, garam masala, amchur, red chili powder, and salt. Mix thoroughly. Finish: Add chopped coriander leaves and mix. Let the filling cool. Assembling the Samosas: Divide Dough: Divide the dough into equal portions and roll each portion into a ball. Roll Out: Roll each ball into an oval shape and cut it in half. Form Cones: Take one half and form a cone by folding the straight edge and sealing it with water. Fill: Fill the cone with the potato mixture and seal the edges with water. Repeat: Repeat with the remaining dough and filling. Frying: Heat Oil: Heat oil in a deep pan over medium heat. Fry Samosas: Fry the samosas in batches until golden brown and crispy. Drain: Remove and drain on paper towels.

1. you can marinate the chicken with the sauce the day before for maximum flavor.
2. use whole pepper corn instead of the powder

I just watched your Q&A video, I didn’t realize you were in Fukuoka. I’ve been there before! I was in the US Navy, stationed in Sasebo and we used to go to Fukuoka for the night life. Those are pretty old memories though! 😅😅😅

and samosa Ingredients:
For the Dough:
2 cups all-purpose flour (maida)
1 teaspoon carom seeds (ajwain)
1/4 teaspoon salt
4 tablespoons oil
Water (as needed)
For the Filling:
4 medium potatoes, boiled and mashed
1/2 cup green peas (boiled or frozen)
1 tablespoon oil
1 teaspoon cumin seeds
1 teaspoon fennel seeds (optional)
1 teaspoon ginger, finely chopped
1 green chili, chopped
1/4 teaspoon asafoetida (hing)
1 teaspoon coriander powder
1/2 teaspoon garam masala
1/2 teaspoon amchur (dried mango powder)
1/4 teaspoon red chili powder
Salt to taste
Fresh coriander leaves, chopped
Instructions:
For the Dough:
Mix Dry Ingredients: In a large bowl, mix the flour, carom seeds, and salt.
Add Oil: Add the oil and mix well until the mixture resembles breadcrumbs.
Knead Dough: Gradually add water and knead into a firm dough. Cover with a damp cloth and let it rest for 30 minutes.
For the Filling:
Heat Oil: In a pan, heat the oil and add cumin seeds. Let them splutter.
Add Aromatics: Add fennel seeds (if using), ginger, green chili, and asafoetida. Sauté for a minute.
Add Potatoes and Peas: Add the mashed potatoes and green peas. Mix well.
Spice It Up: Add coriander powder, garam masala, amchur, red chili powder, and salt. Mix thoroughly.
Finish: Add chopped coriander leaves and mix. Let the filling cool.
Assembling the Samosas:
Divide Dough: Divide the dough into equal portions and roll each portion into a ball.
Roll Out: Roll each ball into an oval shape and cut it in half.
Form Cones: Take one half and form a cone by folding the straight edge and sealing it with water.
Fill: Fill the cone with the potato mixture and seal the edges with water.
Repeat: Repeat with the remaining dough and filling.
Frying:
Heat Oil: Heat oil in a deep pan over medium heat.
Fry Samosas: Fry the samosas in batches until golden brown and crispy.
Drain: Remove and drain on paper towels.
