It’s Too Easy || Basic Bread Three Ways

  • Lots of things happening on the farm today - Ben’s back at it on the ram pens he is building for Roots & Refuge. And Meg is in the kitchen showing how she makes her easy basic bread recipe, with three variations.
    Yeast we buy: www.azurestand...
    Basic Bread recipe
    2 Tbs yeast
    2 Cups warm water
    1 Tbs honey
    1 Tbs salt
    2 Tbs oil or butter
    5 1/2 cups flour
    Mix yeast, water and honey together. Let sit until bubbly. Add salt, oil and flour. Knead until dough is soft and smooth and not sticky. Shape into loaves, let rise until double. Bake at 375* until golden brown, about 30 mins.

      @@hanorabrennan8846 I just lost interest after the Arun situation with NO EXPLAINATION and discovered he has an editor and made us all believe he was doing "his editing" in his "editing corner." Now he tries to defend that to say he has to "edit" and aprove before he sends to the editor. Pshhh I also got sick of watching Becca laying in bed every chance she got. Suck it up buttercup. Its about time she starts working. Since Arun left she has been forced to. I saw greed and mamin as being top priority re: books and Abundance plus. Stick to homesteading Justin. Next you'll be a CORPORATION like the rest of the world. DEFEATING the SMALL homestead goals and teachings.

      On that note, I just want to mention that I use the King Arthur flour recipe for " easy white sandwich bread " but I make whole grain, usually "sprouted" ( OG ) spelt or wheat flour ( I source locally or from Vitacost online ) , and use coconut sugar in it btw, and it's been a great recipe for me. Basically no-fail. With the whole-grain flours I just use less, but since I never end up measuring and keeping track the whole time, idk exactly how much, I just go by the feel of it and end up leaving it a bit too sticky-seeming, to avoid it seeming to be pulling apart too easily ( the dough ), getting too dense or whatever the term should be for what I mean. I also get yeast and the sugar from Vitacost. I get occasional great discount deal in my email inbox from them, and shipping is always free for an over $50 order. But I do like to support local grocers too, I just don't live near town among other reasons. Anyways, I highly recommend this recipe if anyone wants to try using whole grain and sprouted flours. I haven't tried adding more liquid instead of backing off on flour amount.

    What a cutie hiding in the cabinet! I totally enjoyed watching you make the bread---just like my grandma and my mother made theirs: no measuring, just by guess and by golly! Dinner looked fantastic although I think I could have left out the sweet potatoes and squash and added carrots and celery (although I loathe celery, but it goes well with the onions, carrots, and spuds), but that's just me. The pens looked great and I am totally impressed with the young men who pitch right in to help by either holding a camera, herding the little one, or painting with dad. Nice---just totally nice and very like what 'farm life' used to be---even on the ranch.

    I love that you care enough that you want the end result to look nice on your property by painting. Plus the paint preserves.
    And your bread and rolls are beautiful and I imagine delicious too! I am new watching your channel. What I see so far I love. We have three sons too. I lost my husband to brain cancer which took away my dream of having a little farm maybe. That was four years ago. Our sons are grown now with wives and children of their own. Those grandchildren are my reason for living. They are the smile in my heart and on my face! Perhaps I will look for land to buy in a year or so. I have enjoyed watching your videos. Now I can binge watch your videos which keeps me busy and my mind occupied. Thanks for inspiration. You guys are awesome! Oh my! I just saw that you guys have FOUR sons! Wow they are beautiful children! And your daughter is a little beauty just like her Mom!

    Hey Meg , as a retired Pastry Chef I believe it's easier for people who do this daily or weekly to throw together if you will than to weigh. For Folks that are new to Baking follow a recipe then twerk as you go.
    I made cakes and strudel but once a week I made Baguettes for Fondue so I could just go by feel as well 😉.

    Hey Meg! I make bread several days a week and have my own standard recipe I use for almost anything, I just wanted to let you know, if you guys like softer loaves that hold up for 3+ days then get some Malted Milk Powder or it might be labeled Diastatic Milk or Diastatic Malt powder (all the same thing), it will give you that added freshness length, plus a super stable, soft interior (I add about 1 tbspn for 4.5 cups of flour which makes a 2 lb loaf), for your 5.5-6 cups I'd add 1.5 tbspn. I started using it about two years ago and rarely ever bake bread without it now, it makes so much difference and you can get it in bulk from Azure!

      @@amykerns707 You can, it won't have the same effect for as long, diastatic malt powder is the best, but malted milk powder is second best and then milk powder, it definitely is noticable even on the very fresh loaf, when I'm out of any of those things, I'm sure there's some science to it, but I just know it works great. I made a double batch of hamburger buns, using my bread recipe, three days ago and they're still soft.

    Meg - thanks for reminding us that, despite all the specialty bread recipes and instructions, “standard” bread is pretty easy and doesn’t require precision to be successful. After all, “standard” home-made bread tastes 1000 times better than any artisan loaf you’d buy in a store. With some practice you can tweak the amounts to fit your family’s taste. And experiment! If the loaf isn’t exactly what you want, it’s still going to taste really good, and there’s always next time. 😁

      I am so glad I watched this video (though I never miss one, haha). I had no idea you could tweak things a bit. I have always followed the recipe to the T in fear of messing up the dough. Such a great thing to know that it will still work out if you (have to) modify it a bit. Love Meg, Ben & the kiddos!

      @@orchidlife9482 Isn't that the truth!?! I had no idea you could modify it a bit here and there if you need/want to. I've had a recipe that its quite tasty, but I didn't dare vary it! It's so nice to know you can do it and it will still turn out! It's been quite a while since I made bread/rolls/cinnamon buns, but I'm eager to try it again now, knowing that as long as the yeast is good, it should all work out just fine. After all, even your worst homemade bread loaf is still far better than any store-bought loaf!

    I’ve always done 2 tablespoons of yeast also for two loaves too. I’ve been making breads for almost 50 years. Nothing better than homemade breads, rolls, and cinnamon rolls! Looks great and I’ll wager the aromas in your house is out of this world

The bread and rolls looked so good. Have you included your kids in bread making? They may enjoy it.     I love watching your method for making bread Meg. Thanks for showing each step. Your view out the window is beautiful with Daisy and Cub out there. Ben is doing a nice job on the wheel brackets for the ram pens for the Swards. Lilliann looks like she just woke up from a nap. It was cute seeing her come out of the cupboard. Beautiful loaves Meg.     I have to say that out of all of the Homesteaders I watch on RUclips, y'all are some of my favorites! Your videos are interesting, genuine, not too much talking, yet very informative! They convey peacefulness. I can't watch when animals are being processed, squeamish, but everything else is fantastic😊 I also love your soap and your adorable kids!

    I’m one of 6 kids (I’m 63 now) but as a child, my mom had a vintage bread machine (a metal bucket strapped to the counter with a handle attached to a bread hook) and she made 20 loaves at a time…… of course some were different….. savory ones, cinnamon and raisins, etc…..

    Thank you for the bread recipe. Yes, this IS a recipe. It's how I was taught to bake. My Grandma once said she didn't know what the measurements were, she just dumped it in until it looked right. And so... "dump cake" was born. I've read a lot of recipes and this just looks right.

    You can see why they say women are better at multitasking. Mixing and baking THREE different batches of bread at the same time. While doing dishes, child care, of a Small child no less. Making dinner and filming it all. Then afterwards she does her AND his editing of videos. 👍👍😁😁

    Back in the day when each of us were running crazy schedules, I kept a day timer in 2 sets of colored pencils (things that coild be altered) and 2 different colored pens (things which could not be switched up); one set for me and one set for him. I encouraged some type of notebook for him to keep as well. Then once per day or couple of days, we would go over the day timer and also schedule in joint activities, appointments,commitments, etc...

    YES!!! Meg, PLEASE post more videos of you cooking. This one was awesome! I have my standard bread recipe, but I might give yours a shot. I love how easy it is for you to take one main recipe and easily switch a couple ingredients to turn it into a whole new end product.

    The science behind bread making is for the folks who didn't have good Mamas to teach them how to make bread. The end result is the only thing that matters in baking. A big smile or an "Ahhh" or a "Mmmm" is what tells you you done good.

    When painting gates or wire fence, put on a rubber glove; put a string knit glove over the rubber glove; dip the glove into the paint and have at it! Gets all the nooks and crannies easier than a brush. Toss the cheap knit glove and rubber glove and you’re done with little clean up😊

    Thank you for showing your how to on breadmaking! It made my life way easier cause I never thought about changing how to let the dough rise. With the short rest I don't have to watch my dough rise over the edge of the bowl on my machine anymore! And we have a new favourite, cinnamon and raisins. Soo good.

    Made the sandwich loaf today!! It was so good and so simple! I love how quickly it came together- it was super easy. Will absolutely be making it all the time! 😋 the kids loved it too!

    Indeed we have resumed the good habits of the elders who knew much more than we can imagine.
    Meg and Lisa, I forgot to mention that in this way you need less yeast.
    For the two buns I saw in your video, I would put two teaspoons.
    Last thing: you can also prepare your loaves in the moulds and let them grow in the refrigerator. This method requires more space but I advise you to try it too.

    I finally made your version of homemade bread, and it is now going to be the one I make all the time!! I had been using a recipe that was for hamburger buns to make into bread and it was very good. One thing I like about this is it seems more solid when I need it to be. It doesn't fall apart. I also LOVE not having to do a 1st and 2nd rise. I was able to make 2 loaves of bread this past Sunday after coming home from church. They were ready before we went back to church that night!

    Ben and Meg, you are an amazing couple, raising a wonderful family. You are both so talented, and, as someone said, you don't get flustered. I'm sure you do at times, as no one is perfect. You make me wish I was your age again so I could give this a try. I'm in my 70's and in poor health so that won't happen. That makes me appreciate you that much more. You might say I'm living your life through your videos. Thank you for sharing your life with us.

    Meg, I imagine you would need to cook by feel because all your men must need a whole lot of feeding. You are such a natural in the kitchen. Little Buggy obviously loves her food too.

    Tried your basic recipe for bread and we love it. Not buying crappy bread anymore. I have made sourdough but sometimes we just want a nice sandwich bread and this fits the bill. Thanks so much.
