I'm a South Indian. You have used radish, bay leaf, Fennell (green colour cumin), kalonji in your recipe. Out of curiosity, I'm asking. Are these things considered satvik bhojan in North India? Please don't take offense. Just curious.

1)Mustard/Rai/aavalu/sarson/saasve, kadugu 2) Ajwain/carom/vamu/oma 3)kalonji/onion seeds 4)Methi/Fenugreek/Menthulu/menthya/vendayam 5) Jeera/cumin/Jelakarra/Jeeragam/Jeerige 6)Saunf/Fennel/soumb/soump. Depending on season/weather, Mustard & Carom are altered means one of them will b skipped. 5(paanch)spices used in poran/tadka so it's named as PANCH PORAN👍🏼. Above items are mixed in different ratios & kept, 1tsp of that above mix spices put in hot oil crackled before or after the curry/dish preperation. Mostly used for seasoning/tadka/tarka/popu/thiragamaata/vuggarane/poran gives nice aroma & good for health🙏🏻
