Hey love! Little pro tip for prepping egg rolls the day before! Get yourself a baking sheet and line it with wax paper and then paper towels! Once you you place the uncooked rolls on the tray place paper towels over them and then wrap them up to have ready to fry the next day! It will keep them dry! I also will fully prep them and and freeze them.

Add vegetables oil crack your egg once done set to the side, sauté your veggies for a bit then add eggs back and add the rest of your ingredients with the rice.

Add only 2-3 cups of day old rice and a few splashes of soy sauce. Another tip: leave cooked rice uncovered in fridge to remove excess moisture or let sit out the day of. Dry rice gives better results. 5. You want to have a bit of the smokiness from the piping hot skillet transfer to the rice when stir frying. THIS IS KEY. Overloading your wok will void that authentic taste. Always do small batches and I PROMISE you, you will achieve that takeout flavor.
Miriam! Love you and your cooking. I’m Asian (ha) and will say the reason home fried rice doesn’t taste the same as restaurant fried rice is due to the high heat restaurants use. Their woks are over insanely high heat, so it just has that special taste. The best my family have gotten to almost restaurant fried rice is to cook everything on as high a heat your burner can go and cook each component separately, especially the vegetables as they release a lot of moisture, so you want to cook all that moisture out as much as possible. Then mix all the separately cooked components together in the end. That’ll get you close.

I always add oyster sauce to my fried rice too! It might help to fry up the frozen veggies first to steam out the frost and water and then add back to rice :) restaurants use a TON of oil, that's how they get the grains so separate! And some good ol msg 💕
Chinese restaurants vary depending on where you live. I noticed that when I add a little oyster sauce and chicken bullion powder to my fried rice the flavor was very close to the restaurants here in Michigan 🙃
Hey Miriam! I'm Ross AKA MrJRoss. Long time fan, first time commenter. So that rice though... one thing is yes day old rice, but you can also spread it out on a sheet pan and let it dry out in fridge or freezer. For fried rice I heat about 2 tablespoons canola oil in wok and heat till shimmering (high heat is key). Stir fry any meats, remove and set aside. Add oil and stir fry veggies til they get a lil color. Create a well in center and crack an egg or 2 and start scrambling, then incorporate the rice stir frying them together. Add meat back in and then add bout 2/3 of your sauce mix. (1/2 c chicken broth, 1/4 c soy, 1 t oyster sauce, 1 t fish sauce (optional), white pepper, 1 t sesame oil, 1 t 5 spice, 1 t chopped garlic, 1/2 t ginger). Continue stir fry until almost dry. Take off fire and add some butter and remaining sauce, incorporate and enjoy!

Try adding a little sesame oil to your rice. I made hibachi following someone’s recipe on RUclips and was very pleased with the outcome and it definitely taste similar to take out ! I love to cook and eat so I was so proud 😂
I’m not Asian but I love my fried rice just some tips when using day old rice separate the rice with your fingers before putting it in the pan to fry. also to start with cooking the egg first then you chop it up as much as possible then throw in the frozen veggies . then when adding the rice make sure you pan is really hot to constantly stir as well as mixing everything together your sauces and what not do it in that order♥️

Yes Ma'am....Yessah! I love making Chinese takeout food! I'm not Asian... but you may be missing a dash of MSG. MSG is okay in small amounts which is what a lot of restaurants use (not just the Asian ones). And day old rice is best for fried rice. Don't know if that's what you used forgive me.
Everytime I make fried rice, it tastes authentic. You already used a day old refrigerated rice. Now try Adding meat first and then sautéing that with the veggies before adding the rice. The umami flavor soaks in more that way. To avoid using MSG. Avoiding frozen veggies help. Also a little bit more soy sauce, oyster sauce and then fry a little bit more. I’m not sure if you used a wok, but that makes a difference. Really fries and keeps the heat so the sauces fuse with the rice 💙

Hi Mariam! Chinese fried rice usually has eggs along with the protein of your choice. My dad owned a Chinese restaurant for over 15+ years and he has taught me that a good fried rice requires high heat. The max heat is the best so you can get all that delicious char flavor from the wok. Also, he used seasoning soy sauce instead of regular soy sauce. It gives the rice an umami taste and another depth of flavor. I love your videos and I hope this helps! 😘

Hey Miriam! You could always try to add some chicken bouillon powder to the fried rice to give it that more msg umami taste which will give it that flavor that pops! 😁 I personally use some Knorr branded kind!

Chinese fried rice usually has eggs along with the protein of your choice. My dad owned a Chinese restaurant for over 15+ years and he has taught me that a good fried rice requires high heat. The max heat is the best so you can get all that delicious char flavor from the wok. Also, he used seasoning soy sauce instead of regular soy sauce. It gives the rice an umami taste and another depth of flavor. I love your videos and I hope this helps! 😘
