This reminds me of a recipe for eggplant and tomato quiche which is much more complicated and time-consuming.. This is a great time saver and delicious, well done!

I've been looking for a different eggplant recipe to try and this one looks good. I'm a vegetarian so would leave out the ham and prosciutto. I've had decent results omitting meat from recipes so might give it a shot.

I eat eggplant at least 3 times in a month, so I amalways searching for recipes. This looks good but I don't eat meat so will find something else. I will probably add spinach too. Thank you for sharing.

Instead of egg am planning to use flax powder and in place of bread may use amaranth flour rotis similar to tacos and to bring in more binding can use potatoes and cottage cheese instead of cheese
Happy to try this I have all the veggies in the garden right now! I imagine flavored bread crumbs would be best? I have such a strong urge to throw butter in with the sauté haha but olive oil it is.
It looked great until he added bread milk and garlic and too much cheese. Certainly add the kilo's if you ate that everyday. I would have added pasta to the vegetables and fresh shredded Parmesan. This recipe is too heavy on the stomach. 😒😒😒

Definitely need to omit the meat. Eggplant is a vegetarian dish no meat should go in eggplant. Other than that it looks really good.
