I think its because Ben did worked in a Frech restaurant. While Jared/Gerald only start saying Oui after Gordon mentioned about his history in Frech. So one was more natural while the other was way forced. You can actually hear it to the way Jared had to take a second to stop himself from saying yes and say oui instead

If you for Example got something like a Open Kitchen, but your Cuisine isnt French but for Example S Spanish or so, it might simply fit better to say "Yes/YA Chef" or use the Hispanic Equivalent, even thou you are in France.
