Bhutanese make varities of ema datshi from both red dried & green chillies. Big chillies are normally less spicy than the smaller ones. You can try kewa(potato) datshi or any meat datshi. Same process but you need to cook the meat first, here shakam(air dried beef), sikham(air dried pork) datshi are also made.
