    Makes about 8 pancakes
    Ingredients:
    1 pineapple cored & chopped into small cubes
    2 tbsp brown sugar
    2 tbsp vegan butter
    1 1/4 cups all-purpose flour
    2 tablespoons white sugar
    2 teaspoons baking powder
    1/2 teaspoon salt
    ¾ cups water
    ½ cup coconut milk
    1 tablespoon vegan butter melted/vegetable oil
    Instructions:
    For the caramelized pineapple: In a separate pan, melt 2 tbsp of vegan butter. Add the chopped pineapple to the pan and the brown sugar. Cook until caramelized. Set aside.
    To make pancake batter: First mix dry ingredients; flour, sugar, baking powder, and salt.
    In a separate bowl whisk together water, coconut milk and melted vegan butter or vegetable oil.
    Combine dry and wet ingredients together. ( It is fine if the batter is a bit lumpy.)
    Heat a non-stick pan with a very small amount of vegan butter. Pour about ¼ cup of batter into the pan and use your ladle to make a round shape. Once bubbles appear on the pancake, flip and cook the other side until golden brown. Repeat with the rest of the batter to make the rest of the pancakes.
    Top pancakes with caramelized pineapple when serving. Serve with maple syrup.
    Other options: Instead of pineapple, you can top with caramelized banana or chopped fresh mango.
    Alternate form: My family prefers the caramelized pineapple as a topping but you can also combine it with the batter and cook it that way.
