The reason the big bar does not work well is that the poll's of the magnets on the PC fan are too close compared to the poll's on the stir bar. Simple solution, mount the fan magnets on a piece of ice-cream stick further apart and then onto the fan. Obviously just cut the stick shorter. Also break the fan blades off, less air resistance

@@peggyorlowsky9463 how long before you see seperation? With mine I get about 6 months before anything noticeable...sometimes even longer. Seperation will eventually happen though. It will be quicker to seperate depending on the ingredients you are using. For example if you are putting oil in your sauce. By the way, there is nothing wrong with using xantham gum ...I just like to find other ways to do things too

I have done this sauce a few times now. I did buy a magnetic stirrer to compare. My home built one outperforms it (I bought a fairly expensive one.). And no, xantham gum will thicken and emulsify. But the stirring also brings out the flavours into the vinegar. You get a much better taste at the end.
In the video where you used the stir plate you showed a pwm controller. I didn't see you put that in in this video. Is it necessary or does the stir plate work fine wirh just the potentiometer. Thanks.
Making progress on the stir plate but run into a problem: the potentiometer only activates the fan when it reaches about 95%. Not sure why. I went with the potentiometer due to cost.
@@ChilliChump thanks for the stir plate idea. I have gotten mine going with the fans I mentioned with the low medium high settings. Have not gotten the other one going yet...a electrician I spoke to suggested an 100 ohm 5 watt pot so will try that and let you know.
Alas I am afraid I must report that I think I burnt out my fan. Unbeknown to me when this fan arrived (and I bought two! lol) their wiring is all the same colour. All black. When I connected them to my 12v to test out all I saw was smoke :( I will buy some much cheaper fans tomorrow and try again...how do you know which is positive and negative if the wiring is all the same?

Seb, I wouldn't recommend that one. You have less control when starting up the stirring. If the "L" setting is too fast, then you will have a problem getting it going.

It's really a shame you did not include stirring the large demijohn bottle. It's interesting, you are the third person showing a similar setup. All of them say at the end that they tried it with a big bottle but nobody had shown it!!! I think that tiny motor you have can't possibly stir demijohn bottle.
Problem with the larger stirr-bar are: 1) it's too large for the bottom of the bottle you put it in. 2) you glued the small magnets on the fan too close to one another. Problem with using a fan motor for this are 1) Fans are not designed to be (externally) speed controlled. You probably have found that with the potentiometer as well as with the pwm controller. 2) Computer fans are not designed to be loaded. Not only are you adding magnets that add to the weight, you also ask from the fan to transfer quite a bit of energy into your liquid. All that has to be delivered by your fragile fan motor. And you let it run for weeks. May I suggest you spend a little more and get the type of motor that model airplanes use. They are designed to run smoothly even with a load (they drive props) They are designed to be speed controlled over a wide range of speeds. (They may require a motor driver. There are very many different types out there) Google is your best friend.
Actually computer fans are designed to be controlled either externally or by software the fan doesn't know the difference. The extra load on the fan really isn't a big deal either considering these fan can run continuously for years before failure and they're dirt cheap.
I'm almost finished building mine based on your design. Just waiting for a stir bar to arrive then I can test it.
Great project! Word to the wise: I just fried a similar fan rated for 6VDC by running 12VDC to it. Lasted about 3 seconds. Mind your voltage!

I use a 5l flask with it. You may have some challenges if the liquid you are storing is too thick
@@ChilliChump the liquid would be essentially a light beer wort mixture to cultivate yeast
Then it should be just fine! I managed to stir up quite a viscous chilli sauce with this in the 5l flask.

Why is it so hard to find a reversible or counter clockwise magnetic stirred?
The stir bar should always be smaller than the space between the magnets to prevent the bar running away. Still a great video.
My sauce is separating still after using the stir plate. I am guessing I will have to use the xanthan gum to keep it together.???
How long did you stir for?
