It's Pico de Gallo 1cup red onion 2 cups diced tomatoes However much jalapeños you can handle. I use Serrano peepers. They have better flavor... but are a bit hotter. 1/4 cup cilantro 1-2 limes squeezed *optional diced avocado/ diced cucumber Salt/ pepper/ garlic to taste. I usually make a huge batch of this and separate some out to make ceviche by adding diced raw Orange Ruffle or Sole fish and letting it marinade in the lime to "cook" it. You can do it with shrimp also... but be sure to add it raw and let it marinade in the fridge for a few hours minimum. I usually let it sit over night to all the flavors blend.
Imma be honest with you… I had no idea it was ethical to cut a tomato tag way and I appreciate you for showing me a new way of living because I often avoid tomatoes because it’s so messy

Like that chopped onion technique , I slice horizontally then vertically. Better to keep onion together for the horizontal easier to slice down when already sliced across. Haven’t sen any other chef out there as of yet. Notice that on another of your videos. Great

1 tip choose your tomatoes a little hard not too soft. Too soft makes them harder to cut because of the juices.
