Same with us in Tikopia, a tiny Polynesian island in the Solomon Islands. We only roast the ulu, clean it then pound it until it is mashed well then we add the fresh thick coconut cream with little salt . Actually, we don't add sugar to our food. If we want it to taste a little sweet, we then keep the ulu to see if it's half ripe , same with the bananas. Then mix ripe ones with the unripe but the amount of the ripe portion is much bigger than the unripe ones. For example we can use 4 half ripe roasted ulu fruit with 1 or 2 unripe ulu thus if we want it a little sweet . It's all natural and yummy. Thanks anyways Mr Nicholas for sharing your video with us. to make the sauce they put a red hot stone from the umu in the midle of the silver basin and drisle the sugar on the stone and change to a other hot stone but never too sweet,everything is all done contemporarily its natural flavours. ot there🙏

The one you are talking about is call kaufolo sami. In Samoa back in the days, they used to use sua sami with coconut cream and ulu kugu or some people added salt. The other kaufolo is the sweet one and that's the one I made. Caramel the sugar and coconut cream and hot rock. Now I know why we are all confused 🤣. Well, I am learning something new every day and is good to know 😀. I am going to ask my mum every time I cooked Samoan old time food. Your kaufolo would've been much yummier if after peeling off the skin, wrap them up in banana leaves , give the breadfruit a good massage while still hot, then enjoy it by dipping piece by piece in a bowl ( use ipu popo)of fresh coconut cream.
