Idli chutney sambar.....amd as u said the softness of idli depends on batter n fermentation n it depends lots of conditions mostly weather...in summers u get it fermented real fast than in winters...and also we prepare the mangodi curry but rather thsn curd, we use milk
Simple, healthy and yummy dishes with lots of love and taste, Swati😊 Actually, being South Indian for soft idly, we use grinder for grinding idly/dosa batter and not mixie. Usually 4 cup idly rice and 1 cup urad dhal is perfect ratio. But, if you grind in mixie, then go for 2 cup idly rice and 1 cup urad dhal. Also, as you said, 8 hours fermentation is a must.
This is so helpful. I was also thinking for wet grinder but the weather is so good that I really dont need it at the moment I guess. Thanks for replying here. 😊
@@TalkingMomhi..for the weather of vizag..mixer is suitable fr winters but in summer the batter doesnt turnout good with mixer ...its best to use wet grinder or use ice cold water if u use mixer
@@TalkingMom Disagree with abv comment Live in bangalore Grind the batter in mixie (5 heaped or 7 flat cups of rice +1 cup urad dal +1tsp methi seeds optional) soaked over night + 1 cup cooked rice kept in 1 cup water in fridge overnight (cold helps with the heat generated in mixie while grinding) + 1 cup left over batter(optional, ferments in 4 hour...over flowing type for bangalore weather!)
Idli batter can be used for uthapam, kuzhi paniyarams and mini idlis... Loads of love to you dear swati, love your energy, enthusiasm and zeal... Keep them coming... Shubha Navarathri to you
This is another receipe with 10 different methods. I finally settled for 3 cups of rice with one cup of Urad dal and 1 tsp of fenugreek. I prefer Pesarat with Allam chutney. I used tomatoes instead of tamarind and I love the rich taste with ginger.
It’s amazing how you find so much time to cook with two children around.. kudos… Can you make a video on your daily routine ? Like how do you allocate time to each chore and how much time you sleep
I just love watching your videos again and again ❤ such genuine effort you put into everything, the ideas, the planning, the execution of be it stock, cleaning, cooking, organising, making us feel like pre prepared for the kind of kitchen management skill, love from a telugu state 😊
Idli should be made the very next day after fermentation. It wont rice if you keep in fridge and use it. 1:3 ratio for crispy dosa and 1:2 for fluffy idli. Consistency in the batter is different for both. Idli should be just pour while dosa can have more water. Also the smell changes, so you can adjust timings for fermentation as climate changes You are really a hard working mom who has a craft for putting tasting and simple food on the table. Hats off to you😊
I don’t like cooking but I have tried few dishes from your channel and they turned out really amazing. I am also from Rajasthan and this festive season I will definitely try this version of baati. Thank you Swati ❤️ and look forward for more recipes 😍
Hi madam. Idli batter measurement is ( idli rice 4cups and whole uraddhal 1cup). Dosa bater( ordinary sona masoori rice 3cups and whole urad dhal 1 cup). U can also do variation in dosa batter ( 3cups sonsmasoori rice:1/2cup mix of toordhal, Chana dhal and 1cup uraddhal), u can also make one batter common for idli and dosa with following measurements ( idli rice 3cups: 1cup sonamoori rice:1cup uraddhal)
Love how you mentioned milk of your choice. That's very beautiful. Coukd you please try one day of vegan eating we could get some ideas too, darest lovwly Swati❤
Use grinder to make the batter Soak rice and urad dal and methi Dana seperately Grind rice first and then urad dal and methi Dana together..it will give u a fluffy batter..now mix both the batters and fermant..ur perfect dosa batter is ready
Try the wet grinder for best results. Also do try the idly ravva based recipe for idly. The sambar goodness is soaked up and it's heavenly. With the same batter in a deep cast iron kadai make a thick uthappam or as we call dibba rotti.. that is just heavenly

I am watching your video in English but I have to google every word in the ingredient list to figure out what it is. Not everyone understand 10 different words for one ingredient used in India. Carom is same as Ajwain, caraway etc. Please list English words in the list. Badi is a mixture of dhals and Baati is a stuffed bread. I learned something new today. Mangodi made with moong.
Hi Swati, thanks for sharing the recipes I'll surely try it. I need your feedback on Apple MacBook as we are planning to buy, request your suggestion it will be really helpful in deciding. Thanx in advance ❤🙏🏻
Hi Shruti, I guided him mutiple times for around 6 months but never pushed as pushing makes it bad. Some kids take 1 year to understand the process which is very normal. Once I started getting cues from him that he understands, I started keeping him off diapers and took washroom rounds after set intervals of time. Go slow and easy, they will learn. :)
