- Can you make a home cocktail tap setup for under $100?! In this video I show you how! Tap cocktails are a simple way to make your life easier when you have to make a lot of drinks quickly, so instead of shaking, today I’ll show you how simple it is to make tap cocktails at home! We’ve done batched drinks before, but with this you’ll be able to make sours that don’t need to be shaken, while still getting that nice aeration and texture of a well shaken cocktail! We’ll test this out on the Whiskey Sour, the Daiquiri and the Aviation, but you could of course use it for any cocktail. All you’ll need is a keg or an iSi Siphon, some nitrogen and some nitrous oxide and you are ready to serve any sour on tap - yes, even ones with a creamy head! If you are looking for a life hack to get more efficiency and more consistent drinks at your bar, pull up a chair and get ready. Taps can be for more than beer, it’s Cocktail Time!

Something worth noting, it looks like you might be using a sparkler tip on the faucet (the bit that screws onto the faucet). These contain flow restricting plates that will create turbulent flow as you dispense. A regular tap for beer service is designed to dispense with minimal turbulence and might give you a different result in the final cocktail.

Hi Kevin, thanks so much for this video. I tried it this weekend with the whiskey sours using pasterized egg whites. This is so awesome and such a gamechanger because it leaves me more time enjoying cocktails than making them. Although making the batch is great fun. Keep up the great work!

As someone who was first introduced to Daiquiris only 3 months ago, I have 2 favorites at the moment. Plantation 3 Star makes the best Daiquiri I've tried so far, but also Plantation Fancy Stiggins Pineapple for a darker Daiquiri.
I recently discovered Probitas (mix of Hampden Jamaican and Foursquare Barbados rums). The best I can describe a Daiquiri with this rum is like a key lime cheesecake. If you live outside the US it's known as Veritas (name was a trademark contention with a US based software company).

I've recently got one of these vevor minikeg things for carbonating my homemade cider with good results, and am absolutely intrigued by the idea of using it for batch cocktails and introducing the idea into the bar I work at as a chef. It's fascinating. Thanks Kevin!

I like to use 2 different types of rum when making a daiquiri. Usually a lite rum like Curzan 2 parts also, a rhum agricole like Neisson or Rhum J.M. half part.

If I wanted to make the whiskey sour without super syrup and super juice, would this still work? I know it wouldn't give as much foam if any, but I love the idea of pouring whiskey sours out of a whipping canister for parties. Any recipe changes you'd make?

Do you have any other videos, books or etc on keg cocktails for a bar? Is super juice the best way to go? Would clarifying the lime juice also help?

As an avid homebrewer, with an 8 handle kegerator, I try to keep a kegged cocktail on draft at all times. I have made several, but the margarita seems to be the favorite. Maybe since I live in Southern California, where Mexican food is very popular. Surprising how fast a 19 liter keg can disappear at a party.

Loooove this one. I always have a cocktail on tap when I have a party. It's pretty simple, but no more work than making a punch bowl or drink dispenser.
Would love to know more about properly making carbonated cocktails on tap. They have been pretty elusive to me, coming out as all foam and then flat, no matter what I change. By making the clarified mint cordial w/super juice, I could conceivably have a carbonated mojito on tap during all the warm months.

I think i would go with el dorado 3 years for daquiri, maybe a plantation blanco. Its something about havana club that has a hint/undertone of intoxicated teens 😝 its pureley for mojito imo

Yes, both can be made like this too, but you can just batch them in abottle and put them in the freezer. When needed you can pour it over ice. Check out my Stout Old Fashioned episode for that. Cheers!

Love it! If you wanted to make it a day(or two?) ahead of time and keep it refrigerated until serving, would you wait until serving to introduce the nitrous/NO²?

what about using normal or other cream whippers such as isi gourmet? I can't find any sources that say I can not use nitro gas in that whipper other than the nitro siphon is "designed" for nitro gas. I am just curious if there are any major differences on the two types, do you know? @@KevinKos 🤔

Dear Kevin, thanks for the great content. Can you tell us; where can I buy nitrogen capsules, I can only find N2O. How important is it to use N2 for the eggwhite Cocktails?
it's really important. N20 wont give you the right texture. I am buying mine in specialty shops for bars. You can maybe also check out specialty coffee stores because this gas is meant to be used for cold brew.
Trying to make a jungle bird tap cocktail. How would you go about creating pineapple super juice? What would your dilution be?
I haven't try it yet. I believe it's still better to use pineapple as a syrup or juice thatn Super Juice, but that can be done too. I don't have a recipe yet, sorry. Cheers!
If you wanted to make a Mojito or Southside Fizz, would you use the same dilution or add more water? (Presumably pre-infusing the herbs into the alcohol with a whipping siphon)
I wouldn't add water at all. I would add soda water to fiinish up the drink at the end.

Just a note for everyone, pay attention to the type of gas cartridge these use. I have one I got that take threaded cartridges, which means only CO2. Hoping to jerryrig some kind of adapter to allow threadless ones to work (like ISI ones)

For that you will need Nitro Siphon and N2 chargers.

Have you noticed any strange activity with storage of a sour cocktail featuring methyl cellulose? We tried a batched sour, and the methyl cellulose chained together and came out of solution after about 48 hours. My only theory is that either the pH or the ethanol forced it out of solution. We built this prototype with plans to shake it, so maybe the additional water helps mitigate any unintentional behaviors.
If mixing up say a negroni using the keg and tap method here does the entire keg of cocktail have to be consumed in one evening? Or could the keg be consumed over say a week or two? Will the gas carbonate the cocktail if in the keg for to long?
N2O won't carbonate the cocktail so you can have it stored like this for a week for sure (if not more).
Pardon me if I'm wrong, nitrous oxide is laughing gas? Is it safe to use in a cocktail?

It's safe to use it in cocktails. Nitrogen gas is usually sold in bigger cartridges that don't fit in here. Also, it would give you a cascading effect, similar to Guinness.
So would this work with a C02 rated keg - using...C02?

I generally use Wild Turkey 101 for cocktails, and Rittenhouse for rye cocktails.

I’m a rare person who has a home keg system with a cocktail on tap. I was under the impression that citrus (even super juice) will not hold that long especially when mixed into other ingredients and it’s best to not do this? Am I wrong? I would love to be here!
Hi! You can have a cocktail in keg for couple of days and it will still be fine.

It's the dilution. When you stir or shake the drink, you get dilution from the ice, and here it is similar, but it doesn't chill the cocktail, so you have to chill it in the fridge or an ice bath.
Those drinks dont get carbonated ?

Wouldn't it make more sense to measure using scales instead of trying to measure volumetrically? Seems easier and more replicable to me.

should have talked more about how and what the nitrogen and nitro oxide does to the drink. it seemed to be the main theme of the video but you didn't even talk about how the drinks taste with the gas. Just how the drinks taste from mixing them.. which is already somewhat common knowledge.

I know this is a bit of a boring answer, but I really enjoy buffalo trace for my whiskey sour. 🦬 It just provides a great balance of sweet and spice.
