  • Hello friends!! Here is how to make Authenticate “KALYANA SAMBAR”. This sambar recipe is from my dad catering recipe for wedding. This is a traditional Sambar recipe. The beautiful aroma of the sambar is due to the freshly grinded masala. Always use fresh grinded powder for sambar as it will be outstanding.
    I have used normal onions, but you can use shallots that’s great for sambar. Important thing to note about is the toor dal should not be completely mashed like a paste, it should be coarsely mashed. While pressure cooking dal make sure you don’t over cook it to smooth one.
    You can add your preferred kind of veggies in it. Serve it with hot cooked rice and potato fry porriyal you’ll definitely love it.

    Ingredients:
    Grinding Masala:
    1 tsp Chana dal
    5 tsp Coriander seeds
    ¼ tsp Cumin seeds
    ¼ tsp Pepper corn
    4-5 Dry red chilies
    1 ½ tbs Shredded coconut
    Few curry leaves
    Sambar Ingredients:
    ½ cup Toor dal (110g)
    1 large onion
    1 large tomato
    1 Green chili & 1 Red chili
    1 Drumstick
    1 cup Brinjal chopped
    Gooseberry size Tamarind
    ½ tsp Red chili powder
    1 tsp coriander powder
    ¼ tsp turmeric powder
    ¼ tsp Hing
    Salt as required
    Gingelly oil
    1 tsp Mustard seeds
    ½ tsp Urad dal
    Few curry leaves
