Made with rocket leaves, full of nutritional benefits, this salad is gonna bring a smile to your face.
Rocca Salad is a tasty mix of arugula (rocket) with walnuts, pomegranate and a Persian dressing. It's a delicious salad with a Middle Eastern flavor. You will absolutely love the fresh flavor of this easy Rocca Salad
Balsamic Dressing made with just extra virgin olive oil, balsamic vinegar, salt and pepper;
Rocket lettuce - called arugula in the US & Canada, it’s got a great peppery fresh flavour
Ingredients:
Rocket Leaves 2 cups
Walnuts 1/2 cup
Cottage cheese 1/2 cup
Sugar 1 TbSp
Butter 1 TbSp
Olive oil 2 TbSp
Lemon 1 TbSp
Method:
1) Toss some rocket leaves in a bowl.
2) Make the dressing using olive oil, lemon juice and black pepper.
3) Then you caramelize walnuts in sugar and butter.
Mixing:
Add the dressing to the leaves in the mixing bowl. Add the goat cheese and walnuts.
Serve and enjoy!
