I cut the dough recipe in half, it made about 10 sandwiches and a little mini loaf of white bread. The bread was perfect. (I only used 1 packet of yeast in my half version, and 4 cups of flour). I've even used Grand biscuits as my dough in a pinch. Half of my sandwiches were runza, (using a drained can of sauerkraut instead of cabbage), and the other 4 I made ham and cheese runzas. (cubed ham, and jack, quesadero mix cheese). The sauerkraut spices the ground beef up a bit.
They are super good! Really if you don't make the dough then Rhodes Yeast Rolls are a great replacement and save a little bit of time. But this dough is great! Let me know if you try them out! Can't wait to hear how you like them.
First try this basic German's from Russia recipe. After that let your imagination go crazy and fill with your favorite ingredients. Anything thing that you like in a pizza makes a great filling. Best served with a cold beer and sour cream and salt and pepper. HINT make sure you drain the the liquid off the mixture or it will run out while baking. The word Runza in dialect for the German word for a book bag . Make extra dough and roll out like in the vlog to a 1/8th inch thickness and deep fry . Sprinkle with powered sugar or jelly or honey serve with Hot coffee. With the dough left make a loaf of bread. Use your favorite dough recipe. I have at least 8 dough recipes from my German Russian cook books. A sweat dough is very tasty. Make them small to carry a bunch in your pocket when out hunting or biking or on a hike.

After spending the first 30 years of my life in Nebraska, having a Grandma and Mom that made them homemade every year, and a long time girlfriend that worked at Runza, I figured I really hit the nail on the head.
