Why didn't you serve the chicken with the pasta? Who's the jackass you invited for dinner who says, "let's see how good it is" ..... "it's pretty good" ....Pretty good??? Any cook will tell you, they would like you to almost "rave" about the dish on the first bite. It's really the only way to thank the cook. Watching him add his wonderful ingredients - you just know this dish is going to be fantastic. To have this guy (maybe his son?) sit down and say "it's pretty good" ..... Grrrrrrr! I would not have offered him any chicken, and he can forget about any dessert! Thank you for your time and expertise, Chef Pasquale! Bravo to you! ♡
I make once a week, but never in the oven. Yes, I brown my chicken pieces first, also no white meat, and then I add all the veggies and the tomato for the sauce in the pot on top of the stove. I allow the chicken to simmer in the sauce, as it too develops, for a good 2 1/2 hrs. I find the time allows the sauce to fully cook and allow the chicken pieces to take on the flavor of the sauce. Cold chicken pieces without sauce on them taste like the sauce. jmo

Chef Pasquale, Bravo as usual! Almost the same as I make Cacciatore. I prefer to saute the chicken in a large Dutch oven or pan first. Add the aromatics to deglaze the fond, then a splash of vino, white or red , then cover and braise until tender. This saves an American cook having to wash the roasting pan. Chef Pasquale, is one of RUclips's( and Italy & USA) finest Italian chef's, but often great Chef's are used to restaurant staff scrubbing the extra pots. That being said, Pasquale cooks so delicious, if he wasn't happily married and I was a finocchio, I'd be shopping for a ring😀. Ciao Chef! Buon Appetito! Bravo! Cin Cin, filippo

I made it exactly as you said but it burned a bit on top. I would recommend lowering the temperature of the oven to 350 degrees. It was awesome otherwise! Very good!!
You can use the tomato sauce as pizza sauce before you add to chicken in the oven. That's how I make my pizza sauce minus the olives. Remember to cool down the sauce before spreading on pizza dough.🤗
Till you added mushroom we called it TOMATO RASAM with slight variation... 1. Fry mustard seeds, cummin seeds, onions, curry leaves, ginger and garlic finely chopped, green chilli finely chopped, little pepper powder if needed.. 2. Add the tomatoes with salt to taste, mashed like you did and half amount of water... bring it to boil... 3. Add parsley, stir and serve...

I like the Italian Grandma's Chicken Cacciatore recipe better. She lets her chicken cook in the onion which gives it a fabulous taste.
