It's gonna be a paradox
One of the toughest achievements ever done in my opinion is Elysaku's "all advancements half heart hardcore" where, as the name explains, he gets every advancements with half a heart, in hardcore. While yeah it uses a datapack to force you down to half a heart, it's still ridiculously difficult and might be something that's not replicated for years

What about trying to hear every sound in game at the same time? You'd have to kill every mob, strike lightning, and so much more all at the same time. I've thought about this a lot as there are so many ingame sounds it could be impossibld
There is a cap on sounds
its impossible becaus you woud have to fall on to every type of block at once
Unfortunately, even if the minecraft sound cap allowed for it, there are noises that are physically impossible to hear together. One example is the backround noises of the nether cant be played in the overworld. Another is that the three strikes it takes for a soul shrieker to wake up the warden all make different sounds, so you couldn't hear the "warden draws nearer" noise along with the "shriek" noise of the shrieker. Yet another example is that allays can't make a "passive allay" sound while a note block is chiming, as it will make a "joyful allay" sound, and another: a piglin, piglin baby, hoglin, and hoglin baby all have their own sound, so you would have to get them all into the overworld and have them make the sound before they transform into their zombified counterpart.(also the lightning strike would make the challenge luck based) + you cant have an ender dragon sound at the same time as an ender dragon dying sound.
I REALLY LIKE THE IDEA THO, just don't think its really possible.

Making a 5hz redstone CPU (without instant logic), that can handle out of order execution (multithreading and superscalar), and multi level caching.
But in all seriousness, I think computational redstone is a pretty good candidate for this one, as it requires you to know all the quirks of redstone (update order, subticks, etc.) and minecraft-specific mechanics (the Carry Cancel Adder, for example) as well as a lot of real-life computer engineering. I'm designing a CPU myself, and let me tell you, it's not exactly easy :)

To me, the hardest thing to do in Minecraft is accepting when it’s time to start a new survival world, either that be it getting corrupted, or just too old for all the new updates.
For many people the opposite is true; they start new Minecraft worlds every month or two.
When it's too old, just reset some unimportant chunks, that aren't houses, bases, portals, etc.. But don't do it too much because I think it might corrupt some chunks

i think 'difficulty' is subjective when it comes to some things. it's hard for me to understand how to make a beautiful build, while it might be harder for someone else to do a jumping puzzle, etc.

My mind immediately went to trying to obtain bedrock/or some other challenge, in hard-core, without eating food, and without crafting. THEORETICALY it is possible, ibxtoycat has completed the game without restoring hunger and he has beat it without crafting and I think everything you need to get bedrock can be found in the deep dark/jungle temples.
Also, trying to get every registered minecraft account onto one server lol
I don't think that is possible, unfortunately. How would you get observers? Or slime blocks? There are just too many items you need to craft. But an interesting idea nonetheless!

theres some parkour jumps that are possible by comparably, less than a strand of human DNA, or around 1 nanometer + you need to turn to exact angles (down to 0.006 degrees) each tick over the course of the around 30 jump build up to the jump itself (360 ticks). while this is possible it is definitely not humanly possible though (ever).

Is that even possible? For that you’d need to get the “how did we get here?” achievement, but that requires being poisoned and withered, both of which do damage to you. Is it only possible with full prot netherite armor?
Hardest thing is probably doing chained triple neos on one monitor while speedrunning every advancement on another and beating wardens without armor & tools on another until idk you die of old age or something

Ok, I've been scrolling through the comment on your guy's opinions but let's glance into Wifies' hardest task.
Speedrunning - Speedrunning is indeed hard but with enough practice and routes it is easy and after that most of it is based on RNG/Luck Base.
The One Billion achievement - first off this achievement is only at a Snapchat for an April fools update but I guess we should consider this as a task. This task is no joke when it comes to time since humans have only a 60-80 year lifetime its Impossible and I don't think anyone would be so foolish to throw their entire life into a video game but I do think it may be possible on the future as the AI/Technology progress.
Being the best-skilled player (skills as redstoner, builder, parkourist, pvper, etc.) - To be honest, when it comes to this type of task it's more like a "want to be" instead of a task itself. It is hard to be the best-skilled player but people will probably just pass through on.
Being the most clever Minecraft player - This task is no joke when it comes to the Minecraft community's well-being one of the clever Minecraft players since some people have done the impossible task there are several types of being clever one of them being the most engineer and raw knowledge since Minecraft is a sandbox game full of imagination and creativity so if your trying being the "most clever" might as well tell us why your the clever Minecraft player since it is almost way too hard to differentiate the gap of One another.
Escaping the hardest Escape Room - Having a bedrock escape room is not just possible since Wifies' said the hardest task has to be pure vanilla but I did saw a hard legit Escape Room and I completed it in just 5 try's

All achievements half-heart hardcore - I was completely blown away when I saw this comment It is indeed hard and only a few players have done it but it's a DATA PACK and not vanilla.
To be honest Wato Wolf comment has to be the best of clarifying "The Hardest Task in Minecraft" as it says "getting every block is pretty hard, getting every thing saved from every version is harder, getting every banner pattern is literally impossible, getting a grapple on the scale of a question is the hardest" I can't think of anything xd.

I wouldn't consider myself an expert at Minecraft, but I do consider myself a Minecraft veteran. I've been playing for over a decade. Back when the early 1.0 came out.
(Before then actually, but until 1.0 it was more like a demo than an actual game.)
I've done plenty, in a survival world, done just about everything I personally wanted to do. Visited every biome, killed the dragon, found more than one end city, had a base with food, iron, and exp farms. I had done everything I wanted to do.
I've played around in creative a lot more than survival, tinkering with redstone, or figuring out new ways to build. Even taking ideas of tutorials but making them a little more personalized.
I remember one thing I'm proud of is when I truly found my own house building style.
It was a relatively uneventful morning, I go into work at 11 so I wake up early and do whatever I need to first, then play a game for the rest of my free time.
I was looking at my houses on a creative world. Not knowing how to improve them more, until I had an idea.
"What if, instead if building rooms inside this basic square, I built the rooms outside the square?"
So I started making random corners on the outsides of the walls, built them up, and made the roof curve into the already existing one.
And it looked so much better. Better than anything I had built to that point. I then started trying it on larger houses, eventually making whole mansion sized builds, still lacking plenty in detail, but I thought they were great.
I've done a bit more for detail now, but if I'm honest, I still lack a lot of building experience. I'm no good at terraforming, I'm terrible at pixel art and pretty much every other type of building genres. But I got better in one way, and I can get better in others.

Challenges like beating minecraft with restrictions: no jumping, no keyboard, no mouse, etc. etc.
How about this.. getting all advancements in half a heart hardcore minecraft in the fastest time possible on a set seed speed run. You literally can’t even take fall damage. It tests the players mechanics and patience, everyone has about the same luck, and you have to use your brain to figure out the best way to do all the achievements without losing health. This would be quite the challenge.

I have a proposal for possibly the title of the most difficult thing to do in Minecraft.
Achieve everything possible in every completed version such as creating every possible farm, collecting every possible mob, item, block, parkour jumps, anything really. Basically start from the earliest possible release and do everything possible in each version going up. This requires not only an absurd amount of time, but also an extreme amount of knowledge on each Minecraft version and some things can be quite difficult to achieve like for example getting bedrock in survival mode due to a 1.12 glitch and whatnot. This follows the rules as well as adds a huge variety to the tasks and whilst some things are in fact luck based or time based not everything is.
It's absurd and it would be impractical, but for those who wanted to attempt it you could do it on one version and that'd be fine too.

Well… think about it, an escape room requires knowledge of the game, which can be achieved with time. If you had enough time, you could watch every Minecraft video on RUclips and learn anything that comes up in the escape room.

I think the hardest challenge for any Minecraft player to do in a survival world is to collect one of every item that you can obtain without creative mode or using commands. It doesn't sound too hard until you think about what this means. You need to get one of EVERY single mineable, craftable, treasure or mob drop item that exists in the current version, including every building block in the game, this also means the chiseled and polished variants to the stone-type blocks, all of the bricks, every colored block including the dyed shulker boxes, every plant, every food item, anything that can be obtained with silk touch, every tool, weapon and armor piece in the game, every crafting material, all of the mob heads, the music disks, etc. The real challenge here isn't actually gathering them all, it's remembering them all!

Beating minecraft in an ocean-preset superflat world in hardcore mode in a version before shipwrecks.
It took me about 80 deaths to build a tiny platform where I could be safe from the huge swarm of drowneds, by making one-way trips to the ocean floor to mine a single block and be killed, over and over. Another strategy, probably easier that pulling off a miraculous two-way trip to the ocean floor and back, might be blindly swimming thousands of blocks to a stronghold and entering it empty-handed.

The hardest thing to do in a Minecraft vanilla world should probably be getting an enchanted golden apple, a creeper head, skeleton head, dark green dye, vines, oxeye daisy, a brick and putting all of them together in a single cape using the dark green dye from cactus to color all the layers and make the cape itself with the same dye, sure it looks boring but it's technically hard if you try it
In parkour there are types, and one being oj (onejump) where you just do a single jump that can be really freakin hard, which can also include chains. We measure difficulty with d1-11, and so on, such numbers are based on our perception of how doable it is for a person. a d1 is so painfully easy like a single neo, but the scaling is also pretty harsh. At d3 you got triple neos, but at d5 it's butterfly neos. At d7 you got x facing triple neos with 2 blocks of momentum only and so on. The current hardest ranking jumps are at d11-, that being the quad 45 by lapislala and the hardest 1bm jump in minecraft by water. The quad 45 for a long time was seen as an inhuman jump to do in that people would just never make it. Lapislala spent 80 hours just to do that one jump once, and water 30000 attempts for his d11.

About speedrunning what you said about set seed is not true, luck involved is a lot. The seed with the most luck required is a 1.14 seed that has a 1/96k luck required (although it can be less if you lose some seconds on other stuff).
In set seed categories you want near perfect luck and that includes dragon perch, chest loot in versions such as 1.14 and 1.15, flint drop rng (only in some seeds), bed drop rng (where the bed drops), mob rng and this doesn't include the chance of screwing up yourself, which happens more often than not
potentially creating artificial intelligence using redstone circuits that is able to plot route to mars or something? (If this is even possible)
I mean designing a perfect prison is the hardest thing because everything else you can do if you had infinite time
