  • Now a few of you have been asking for it, so here it is... my recipe for how to make vegan cupcakes! This is a great, simple way to make delicious cupcakes suitable for vegans and non-vegans alike. They're super tasty, so give it a go!
    INGREDIENTS: EGGLESS VEGAN CUPCAKES
    x2 cups - Soya Yogurt
    x2 tsp - Apple Cider Vinegar
    300g - Caster Sugar
    2/3 cup - Sunflower Oil
    1 tsp - Vanilla Extract
    360g - Plain Flour
    1 tsp - Salt
    1 tsp - Bicarbonate of Soda
    1 1/2 tsp - Baking Powder
    INGREDIENTS: VEGAN BUTTERCREAM:
    200G - Soya/Sunflower Spread
    660g - Icing Sugar
    1/2 tsp - Vanilla Extract
    1/2 tsp - Water

    I am not a vegan but a vegetarian. I followed your steps but made few alterations .....
    made batter for 12 cupcakes (halfed the ingredients)
    soyacurd =>curd from diary milk
    Didn’t use vinegar but I used a old curd that is the curd itself tastes like a vinegar curd mixture (so sour)
    Butter = 50 g
    I ended up with a very soft fluffy and moist cupcakes and my classmates appreciated me so much
    I haven’t made such a cupcake before

    These are amazing! I was searching on line for vegan cupcakes and stopped the minute I saw Cupcake Jemma! I made them for a party (hosts vegan) and everybody loved them! I can't wait to experiment with different flavours!! Thank you Jemma!

    I made this recipe last weekend for a baby shower, lots of people with allergies, vegan/ gluten free/ egg free/ dairy free! I wanted to keep it simple, so I used this recipe but swapped the normal plain flour to 260g of gluten free plain flour & 100g of ground almonds. It worked perfectly tasted amazing, everyone raving about them even people who said they would never like vegan gluten free cakes 😅🥳 thanks for the great recipe & thought you would like to know it can be g/f as well, it’s so good with the almonds that I’ve promised to bake another batch tomorrow for people who only got 1 as they thought they didn’t really like vegan cake, I’m also going to try adding cocoa powder to make a chocolate version too, thanks again 👏🏻👏🏻😀

    My favorite vanilla vegan recipe!!! It never fails! I've made this numerous times! I use blueberry soy yogurt and granulated sugar instead of castor, sprinkle it off with turbinado sugar/raw sugar then bake. I've used it with strawberry soy yogurt. It's like a cupcake/muffin texture. I've used soy and coconut yogurt and both turned out fine. I have yet to use castor sugar, but I'm sure it'll make the cake even better! Wedding cake worthy better! I've used all sorts of oils if I don't have what is listed in the recipe. Still turns out great! LOVE LOVE LOVE this recipe! So glad I found it! I'm wondering how to make it chocolate? Just replace 1/3 cup flour with cocoa powder?....

    Looove this recipe. I use it all the time!
    You always preach how important scales are, and i totally agree!I hate measuring in grams AND in cups. Could you tell us how much 1 cup of joghurt and 1/3 cup of oil are in grams?

      There are a HUGE number of Indian channels making vegan baked goodies! Check them out. Since India has a very large number of vegetarians one has got to have some options.

    I have made these and they are my go to recipe for any cupcakes! Don't know why there are so many haters. I used 'Nudie' Coconut yoghurt from Australia! They are soo moist and yummy. I have even modified it to use as chocolate cupcakes as well. Trying gluten free versions tomorrow

    A lot of comments saying how good it looks but haven't seen any comments about people actually making them. So I'll be the first, I made these exactly how the recipe instructs. Bottom line, they were terrible. Before anyone says that I'm just a Vegan food hater, I am Vegan myself. I've come across better cupcake recipes.

      Tip: Mine turned out awful too until I started using lemon juice instead of vinegar. I make it with milk instead of yoghurt but can't be that different? My first few tries of vegan cupcakes where not great but now they always turn out great.

      I did nothing differently, did everything it instructed me to do. Double checked. It ended up tasting like bread with watered down sugar.

    Well done Jemma! I've been asked to make a dairy free cake for a friend and thought I would try your recipe. These were lovely, my friend thought so too. Hope to use the recipe to make an 8" cake for her parents wedding anniversary.
    I think they do taste a bit like bread but the next day that yeasty taste seem to disappear and they tasted even better.

      @@alexedeane1670 yes it did but I wouldn’t do more than two layers or cover in fondant as the crumb isn’t that strong for holding too much weight

    I have these in the oven right now!!!! 🤞 1 cup soya yogurt = 250gms if anyone's interested and 2/3 cup sunflower oil = 66.66666gms correct me if I'm wrong please 😁

    Thank you for this recipe you made my friends 10 months old son happy. He's allergic to eggs and milk protein so once again thank you. One question what kind of "milk" (soy, oatmeal or almond) can I use make buttermilk. Or shall I use soy yoghurt with vinegear instead

    This is great! I have one friend who's allergic to egg and another who's allergic to milk, so this is a good recipe to know, lol :P I'll probably end up adding cocoa powder (and maybe some coffee) to the recipe ngl, chocolate is my weakness... XD

    Will this turn out to white cupcake if I use clear vanilla extract instead? Sister in law who's vegan wanted a white cupcake. I made the red velvet vegan cupcake a few weeks ago and everyone loved it including non vegans!

    can i replace the soya/sunflower spread with something else since it's so hard to find it in my home country? and can i use greek yogurt instead of soya yogurt?

      Amanda Risma try soy yogurt maybe or almost or coconut yogurts (of your vegan) is not any yogurt should work . I can’t eat dairy so I don’t really know the tast but Greek yogurt should be fime

    In one of your other videos you mention the importance of measuring in grams rather than cups. Does this not apply here? I'm worried that my cup size will be different to what you have used.

    Jenn if you do not have any Soy yogurt with what can you replace it? using yeast you think it can be made?

      You could add a bit more vinegar and use soy milk. And maybe a little bit less. I use 1 1/3 cup of soy milk with 3 tablespoons of lemon juice (I like the taste better).
      And for the comment above, soy yoghurt is not as widely available as soy milk.

    My 2yr old (soon to be three) has severe food allergies. His food allergies are Dairy, Peanuts, Tree Nuts, Eggs, Fish, Shell Fish, Apples and Strawberries. We stopped going out to eat when I found out about his food allergies. I cook all of his food at home and I also make all of his snacks at home. The only thing is that all the meals I make for him are pretty much limited. I make the same meals every week. I know he wants to eat something different but I have no clue to what else to make. If you have any recipes it would be very much appreciated."

      It's 170 degrees Celsius. You have to convert it to Fahrenheit if your in America

    Just for anyone knowledge . I myslef eggfree baker and not vegan. So far i know, yogurt isnt like by everyone just like eggs. Yes you wont taste yogurt, but only yogurt and oil base cupcakes are tasteless and spoils structure. Eggfree goes well with condesed milk. Its has more fats. That's why. I still has to do expsriment with buttermilk , lets see how it turn out.

      You're better off making her non vegan vanilla cupcakes, the composition of soy and dairy are very different!

      Greek yogurt is a lot thicker compared to soy yogurt which is quite watery. If you really want to make this particular recipe with Greek yogurt then I recommend you mix it first with some water until you get the same consistency that the soy yogurt has.
