I always wanted to try it then my Japanese friend had some from his Asian market and let me try it. Kimchi in my experience was very very acidic not spicy like I thought it was going to be, really crunchy too but when you bit into it it exploded with the liquids it was sitting in! Sadly it wasn’t my thing and I was really bummed I didn’t care for it cause it looks really good but he said usually you grow up eating it slowly learning the flavors so trying it suddenly as an adult especially without rice or anything to mild it out it’s not a surprise I didn’t like kimchi first time.
