Just tried this recipe today. Have to agree that the egg tart is smooth and silky when baked at 120 degrees. But then, the tart is still underbaked. Guess i have to bake the tart longer before adding in the custard.
@@RuthCBH It can be used as whipping cream. Whipping cream is just high fat fresh cream. You can find Payson Breton and President at the supermarket shelves
Yes President, Payson Breton, Elle & Vire and many other brands. Just check the country of origin. :) They are available at major supermarkets like Fairprice, Cold Storage and online like RedMart - bit.ly/LazFrenchCream

I can now say my doctor prescribed some egg tarts for me ;) Could you clarify if the fresh cream is Whipping cream or Creme Fraiche? thanks!
Whipping cream

Looks so yummy! if I do not have a food processor, can i use a mixing bowl to mix up manually?
Sure!
Is the fat content the main factor for the cream?
In that case, will Whipping Cream or Double Cream suffice? Since they also contain 35-38% fat
Yes, you are correct!

Yes, every oven is different so you have to adjust accordingly
If i want to make a huge egg tart (9 inch) would the temperature remain at 120C?
Yes but you will need to increase the baking time
Can we use just fresh cream . We cannot get french cream
Yes absolutely!
Hi, Doc, possible to sub tapioca flour with Corn flour? TIA.
Yes.
@@ieatishootipostthank u so much for your reply, I don’t need to get another type of flour, yay 😁
The tart shells is how many grams ( dough).
22 to 23 grams, 3:42 in the video :)

Its roughly the same
Tried but not sure why the yolk is not cook even after longer time. Followed thru step by step but it didnt work..
What do you mean but not cooked?
The temp is in Celsius not Fahrenheit.
Is it whipping cream when you mentioned French cream?
You can use whipping cream with a fat content of 35%
@@ieatishootipost so it's actually not whipping cream? Can you share a picture of it?

@@ieatishootipost thanks a lot. Looking forward to bake the tarts. Your tutorial is always so good.
Thanks , Dr , l ❤ especially the crust recipe , will try it asap , thanks again!
Where to buy the French cream? Can give the brand label.
try President brand

Why add tapioca flour doc?
When I use all Almond flour, the texture was a little too hard. The tapioca flour makes it more brittle
I live in USA,I can`t find french cream
ps heavy cream only
Heavy cream is fine. French Cream is just heavy cream from France
@@ieatishootipost Thank you
