And, to add to it but I'm more meh on this idea, he'd also know of how many times you've reset. So he'd stay a bit in character, well, the part where he's sans anyway.

Being a king must have been very stressful, worsened by the fact that Papyrus has left him in that alternate universe. Then imagine a genocide route, and it's understandable why only one of his eyesocket is open, and only a little bit at that with minimal effort.
