Trespassing sheep ruin my 4th of July

A few days before the 4th of July I caught these sheep and shepherd trespassing on my property. I went and met him a few days later and let him know I did not want them on my property. Despite a language barrier, he was courteous and moved them off. But not before a bunch of damage was done.
I tried to go locate a bunch of the saplings we had planted, back in May. But I was only able to find one in the upper section near the pond. That's out of about 40 that we planted up there. I was not happy to say the least.
Should I ask for compensation? What can I do, legally? It is posted, but no fences are on my property atm. What would you do?
