  • Refreshing Cabbage Water Kimchi that goes well with any dish. The sweetness of paprika enhances the flavor. Initially, the soup of it has a thick texture, but over time, the moisture from the cabbage creates a refreshing broth. Easily make and enjoy this cabbage kimchi.

    Ingredients:
    - Half a head of cabbage (or 2/3 head if small)
    - 2 bell peppers (paprika)
    - Sea salt (1/3 cup for salting cabbage, 1/2 cup for paprika seasoning)
    - 1/2 cup of plum extract.
    - 1/2 cup of red pepper flakes
    - 1/2 cup of barley powder + 3 cups of water
    1. Boil barley powder and water to make a base for porriage. Let it cool.
    2. Slice the cabbage into bite-sized pieces, wash them, and salt them.
    3. Blend the bell peppers, red pepper flakes, plum extract. salt, and a little water.
    4. Once the barley porriage has cooled, add the blended paprika mixture and mix well.
    5. Rinse the salted cabbage to remove excess salt and mix it with the barley porriage.
    6. Transfer the kimchi to a kimchi container and let it sit for at least 2 days in your refrigerator before consuming. If the broth is too thick, you can dilute it with water.
    *1cup = 200ml
