If you want a more involved game, Mario Kart 8 Deluxe is a great choice. With auto accelerate and smart steering as options, all you need is the control stick and item button in order to race. And with the Switch's button remapping, drifting wouldn't be an issue either. Super Monkey Ball would also work well since it only uses the control stick and nothing else.

Good video but missing once important aspect. One handed gamers tend to want to play a specific game or at least genre which interests them rarely will a COD soldier sit down and think "yeah I want to game, I'll put on Mario kart 8 or pokemon go" If someone's can make a controller to get one hand control both triggers and sticks without repositioning then there's a market for it for sure. I'm trying to make myself a one handed sim racing joy pad but I'm no engineer.
I only couldn't use my arm for a few weeks, so I'm sure I missed a TON of stuff that one-handed gamers need and want. im getting carpal tunnel surgery next week, is mario party able to be used with one controller and hand? what are some other switch games that can be one hand?
The switch actually has a lot of options for rebinding the controller that might be worth looking into, to help!! But in terms of games that are playable with one hand by default, I recommend Pokemon Let's Go, Donut County, Animal Crossing, Switch Sports, and Phoenix Wright: Ace Attorney!
